How do you cook salmon?

Some of H's friends brought us some salmon from AK when they came to Colorado for our wedding.  It's been wrapped in newspaper in our freezer for a few weeks because I don't know what to do with it.  I've only cooked it a couple times and it's kind of out of my "culinary comfort zone," although I LOVE to eat it.  

 

Any recipes/tips/suggestions?  TIA

  • My favorite way (and often the easiest I find) is to grill it. Depending on how thick it is, you can either put it right on the grill or put it in tinfoil and steam it a bit (my mom does it this way and I'm not sure if she puts other things in the tinfoil or not). Are these salmon fillets? Or do you have the whole fish?
  • Personally I like to pan fry salmon, that or broil it.

    Pan fry - I usually put whatever kind of seasoning you like on the fish (make sure to defrost first in fridge)... lemon pepper, garlic, italian seasoning, etc. Then I heat up some olive oil (2-3 tablespoons) and butter in a pan. If you have some lemon juice I usually put about 3-4 tablespoons of lemon juice in there too. Then you just wait for it to heat up on medium to high heat (depends on your stove) and pan fry each side for about 5 minutes or so on each side (maybe less maybe more depending on stove and thickness of salmon)

    Broil - season as you like, heat oven on broil, and broil for about 10 minutes or so.

  • I meant to put in my first reply (I forgot to log out of my withe1nm account last time apparently) but to grill it, you want to make sure to oil the salmon and not the grill so it won't stick if you're going to put it right on the grill. You can season it as you like or marinade it too (I don't recommend using salt though as it dries it out a bit). Once on the grill, you don't want to move it around much but let it get those grill marks and then turn it over to do the same to the other side. The time varies a bit. Have fun! :)

    But, one more question: do you kee the skin on? or take it off?

     

    It's defrosting in the fridge now, so I actually don't know WHAT is inside...haha.

  • Ingredients2 tablespoons packed brown sugar2 tablespoons balsamic vinegar1 tablespoon olive oil1/4 teaspoon dried rosemary1 clove garlic, minced1/4 teaspoon ground black pepper1 1/2 pounds salmon fillets1/2 teaspoon saltDirectionsWhisk together the brown sugar, balsamic vinegar, olive oil, rosemary, garlic, and pepper in a large bowl. Reserve 1 tablespoon of marinade in a small bowl, and set aside. Add the salmon and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator for 30 minutes. Remove the salmon from the marinade, and shake off excess. Place salmon in an aluminum foil-lined baking dish, and sprinkle with salt.Preheat an oven to 450 degrees F (230 degrees C).Roast in the preheated oven until the fish is easily flaked with a fork, about 10 minutes. Brush salmon with the reserved marinade, and return to the oven. Roast until glazed, about 1 minute.

  • I always leave the skin on... I dont think you can take it off when it is raw. But after cooking it, you can usually peel it off while eating it.

  • I like it grilled. Definitely keep the skin on while cooking. You can remove it after it's done.

    If you put "salmon" into recipezaar.com or FoodNetwork.com you'll get a crap ton of recipes.

  • You saved me a fiasco...I'd be that person dissecting raw fish trying to get the scaly skin off, unneccessarily.  ;)

     

    I think grilled is up first tomorrow and maybe baked (using Midge's recipe--brown sugar?!?  yes, please!) another night next week.  I'll let you know how it goes.  Thanks a bunch!

  • I always used to just bake it in the oven- Line a baking dish with tin foil. Put the salmon on top of the foil and sprinkle with lemon pepper. Add some butter and sliced lemon and bake. 

     

    But the other day, H made something really tasty and different:

    1 cup honey

    1/2 cup soy sauce

    ground ginger to taste

    He cooked it on the grill and added the sauce while it was cooking. We had it with garlic mashed potatoes and peas.

  • I never cook it myself (C used to work at a seafood restaurant, so I leave the seafood up to him) but I love it grilled or pan cooked. I've just started using the george forman we got and it's SUPER easy to grill it on those suckers. haha

  • Often I put it in a baking dish, put olive oil on it or butter and put lemon pepper on it.  I wrap it in foil and bake for about 20 min @ 350.  You can leave the skin on or take it off. If you grill it I would leave the skin on.  My Grams puts mayo on it and then bakes it.  

    You could make salmon tacos too, yumm.  Now I want some salmon - too bad my H is deathly allergic to fish :(
