Bloody Hell! I need a potluck salad recipe. =S

... apparently I'm going to a dinner party tomorrow night (Phil thought it was next week, but it's not) and the host has just gone from saying "Don't bring anything" to "Bring a salad". Last time I brought a layered barley salad, but I have no idea what to bring this time! Anyone have any surefire, portable winners? I hate it when people give me less than 24 hours notice.

    my summer standard is spinach with strawberries or grapefruit and avocado (citrus keeps the avocado green) - especially since I had an over abundant spinach crop this year.

    I made this for my birth class potluck and everyone said it was great 

    cranberry walnut quinoa salad quinoa seems to be all the rage here.

    I also bookmarked this one a while ago (grilled vegetable salad) because I use to eat something similar at the Nordstrom grill all the time.  You could grill the veggies and chill the night before and then just assemble before you go.

  • This is my go to, but you can change it up and it will be just as good or better! 

     Eclaire?s Orzo Pasta Salad

    1 box orzo pasta

    1 sm red onion diced

    1 sm jar sundried tomatoes packed in oil, julienne cut ? lightly drain before adding to salad

    1 jar artichoke hearts, drained and sliced

    1 pkg tomato/basil feta cheese (sometimes called Mediterranean)

    1 pkg baby spinach leaves, keep whole

    12 fresh basil leaves, cut into small pieces

    Girard?s Light Champagne dressing.

    Optional ? diced chicken breast or shredded chicken

     

    Cook orzo,drain.  Rinse orzo, let soak for 30 mins, rinse and drain again.  Fluff orzo.  Put orzo in Ziploc bag, add 1 cup dressing and refrigerate for a couple hours or overnight.  Put pasta in large bowl, add everything else just before serving, fold all together and add more dressing if you like.

    here's my go-to salad recipe, always a hit:

    3 tablespoons white wine vinegar
    1/2 to 1 teaspoon kosher salt
    Freshly ground black pepper
    1/4 cup extra-virgin olive oil
    1 bag frozen super sweet corn
    2 cups red or orange grape or cherry tomatoes, halved
    1/2 - 1 bunch scallions (white and green), thinly sliced
    8 ounces fresh mozzarella, cut into small cubes
    1 1/2 cups fresh basil leaves

    Whisk the vinegar, salt, and pepper in a small bowl. Gradually whisk
    in the oil, starting with a few drops and then adding the rest in a
    steady stream, to make a smooth dressing.

    Shear off the corn kernels with a sharp knife over a bowl. Toss in
    the tomatoes, scallions, and mozzarella. Pour the vinaigrette over the
    salad and toss to coat. Cover and let set for 15 minutes or up to 2
    hours. Before serving tear the basil (or cut in a chiffonade) over the
    salad and stir.

    (I don't know exactly how much tomato, scallion, mozz, and basil I use - i just keep tossing it in until it looks about right!  the exact proportions aren't super important)

    super easy and yummy!

    easy salads - strawberries, spinach, either crumbled blue, goat, or feta cheese, candied walnuts or pecans.  Balsamic vinaigrette.

    or apples or pears (bosc is nice), blue cheese, and candied walnuts or pecans.  balsamic or dijon or some kind of not too overpowering dressing.

    just in case you didn't have time for a salad with lots of prep needed.  but somehow knowing you, i'm sure it's going to be beautiful and blogworthy!

  • This is favorite of mine for summer.  Sometimes I make a little extra of the dressing  and then add some corkscrew pasta, too.

    You know, I had this salad before (although I don't know if it's the same exact one, but the ingredients look all the same) at a friend's house, and I freaking LOVED it. I'm saving this recipe from you and I'm going to try to make it one day and see if it's the same one! And even if it isn't, I'm sure it'll be super yummy anyway =)
