In-Laws coming for a BBQ. Dessert ideas?

The in-laws are coming on Wednesday night for a very casual BBQ dinner and DH's mom is a firm believer that every dinner must include dessert. I have no idea what to make. Normally I'm great about it but I am drawing a blank. Suggestions?

  • Here is a dessert recipe that I get raves for whenever I make it. And it is SO easy. And yummy!

    Eclair Cake

    Ingredients2 (3.5 ounce) packages instant vanilla pudding mix1 (8 ounce) container frozen Cool Whip, thawed3 cups milk1 (16 ounce) package graham cracker squares1 (16 ounce) package prepared chocolate frostingDirectionsIn a medium bowl, thoroughly blend the pudding mix and milk. Mix in the Cool Whip.Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.

  • I just made a chocolate cake this weekend for a BBQ and it was delicious. I used a box of Devil's Food Chocolate Cake and added a can of cherry coke. That's it. I did 2-9" pans and then frosted it with chocolate frosting and added fresh cherries on top.

  • We do "Cheaters Cheesecake" aka cream cheese pie

    • Container of thawed coolwhip
    • Cream cheese-the stick of it at room temperature
    • 1/2 cup sugar
    • 1 tablespoon of lemon juice.
    • Oreo cookie pie crust
    • Whatever else you want to top it with or mix in it.

    Mix cream cheese, sugar, & lemon juice.

    Fold in coolwhip, add to pie crust, refridgerate for 1 hour & serve.

    We add in the mini m&ms or top it with hot fudge usually. Its good stuff.

  • Or maybe a mint chocolate chip pie?

    Buy an oreo cookie crust and a half gallon of mint chocolate chip ice cream. Let the ice cream thaw on the counter for a few hours, then spoon into the pie shell. Put in freezer til ready to serve.

  • You can make key lime pie - my FIL asks me to make this all of the time - he has no idea how easy it is...

    Ingredients:

    graham cracker pie crust

    6 oz of frozen lemonade or limeade (let thaw)

    14 oz can of condensed milk

    8 oz cool whip

     Mix cool whip, condensed milk and drink together, put in pie crust - freeze for 2 hours.

     

    Or my favorite one: Grasshopper Pie

    1 1/2 cups milk

    1 pkg (3.9 oz) instant choc pudding

    2 3/4 cups cool whipe

    1 pkg Andes mint candies

    1 chocolate pie crust

    1/4 tsp mint extract

    2 drops green food coloring

    Whisk milk and pudding mix for 2 min, let stand for 2 minutes or until soft set.  Fold in 3/4 cup of cool whip and 3/4 cup of chopped candies (I use my food chopper - much faster).  Spoon into crust.  In another bowl combine mint extract and remaining cool whip and add food coloring.  Spread over pudding mixture.  Sprinkle with remaining candies.  The receipe usually calls for 4 hours refridgeration, I find it is easier if you freeze it for a few hours - it sets better.    

  • I make this for my in-laws every time we get together and they love it:

    1 box devils food cake mix

    1 box of chocolate pudding mix

    2 tubs of cool whip

     Prepare cake and pudding as instructed

    Slice the cake thinly and do one layer cake, one layer pudding, and one layer cool whip.  Make sure your last layer is the cool whip.  I just add strawberries on top to make it look pretty. 

    It's so simple to do and great for summer! 

  • The peaches around us are sooo good right now, so those are on my brain.  Peach cobbler is always a good outdoor/BBQ dessert.  I also made an angel food cake the other day and served it with peaches and ice cream.  Nice and light for summer.
  • I'm always a fan of angel food or pound cake, cool whip, and berries.  My mom sometimes will make her own whipped cream at home which is less sweet.
  • ice cream... deliciousness?

     Line a pyrex, or glass dish with crushed oreos or cookie crumbs, then...

    Soften your favorite ice cream ( I like peppermint or mint chocolate chip for this, but you could use rocky road, etc.)  

     Top it off with a delicious fudge sauce and freeze overnight, then pull it out and let it soften a little and serve.... it is SO good!
