what's for dinner?

I'm cheating:  Chicken Parmesan-  Tyson frozen crispy chicken breasts, Canned Tomato sauce, and pre-grated Parmesan in the bag.  Voila.  Laziness at it's best.  Oh, and the pasta was precooked yesterday.

    I use a mixture of half lean ground beef and half venison we "harvested" last winter. The venison is a bit too strong by itself, but the mixture is divine. It's the only meatloaf I've ever liked, and it's what my granny made growing up. The recipe is from the original Betty Crocker cookbook she still has in her kitchen, although it has taken quite a beating in the last 45 years!

    Sounds yummy! That's the same recipe my mom used growing up!  She still does.  Sans, the venison, though.  I keep saying I'm going to buy one of those BC books.  The new ones aren't as cool as the originals. 

  • They really aren't! My granny knew how much I loved hers, so she gave me the new version for a bridal shower gift. I was really disappointed in the new version; it even had a different meatloaf recipe that we didn't like nearly as much, so I just use the original. I would love to find the original BC version in good condition to use in my kitchen.

    BTW your dinner sounds yummy, too! I am sitting here smelling the meatloaf as it cooks, so every food I think about is making my tummy rumble. Only another hour to go...

  • it's either amy's frozen dinners or if i use the ground beef i've got in the fridge, hamburgers or mini-meatloaves and a couscous side dish.

  • I put a pork roast in the crockpot this morning before I left to work with red potatoes, carrots, and celery.  Walk in the door and bam!  Dinner is ready!  :-)

  • I made pork enchiladas verde and rice.  They are divine.  I'm going to start blogging the really good recipes I use/make!  Lots of the time its improv, so I need to start remembering those things.
  • This is making me hungry!  We're having steak (veg patty for me) with sauteed mushrooms and onions, macaroni and cheese and either salad or broccoli.  Orange, I'd love to see your recipes if you start blogging them.  I love trying out new ones.

  • We're going with spaghetti tonight (something quick and easy) but I bought some really good cuts of meat for later in the week that were on sale at HEB.  I think I'll be making some sort of crockpot brisket or pork on Wednesday. :)
    We have so much time, and so little to do! Strike that, reverse it.

    Aww.. how disappointing.  I want my mom's, but she won't give it to me;  I know the originals were selling on ebay pretty well last time I checked.

  • Wine. I grabbed a meal from Sonic on the way home last night as well but I barely touched it. So yeah, my dinner was wine. :)

  • I have no clue.  Going to a gtg tonight and not sure what bad goodness I will eat while I'm out.
