Menu

Oh my goodness, ladies, have I ever dropped the ball on the menu! lol I had the week off last week and had planned to rent a small cabin at Riding Mountain in Manitoba. Then we had issues trying to find a cat sitter willing to give my cat it's insulin shots, a relative showed up for an unexpected visit, my mom's dialysis schedule was all whacked out and she needed me to drive her every other day...so we just vegged around the house. A sad excuse for a vacation, if you ask me. Anyway, I didn't plan any meals last week. We ate out, lots of grease, over-eating, junk food...you name it. I feel absolutle awful today, and I swear I gained 10 lbs. I am happy to be back on the meal train!

Here's what we have planned this week:

Monday: Leftovers from BBQ yesterday

Tuesday: Roasted Chicken Patties w/ greek salad and, bread and balsamic for dipping;

Wednesday: Squash and Corn Quesadillas with Peach Salsa, with Epicure fruit salsa and nacho chips;

Thursday: Spicy Orange Chicken Grilled Shrimp w/ rice and mixed veg;

Friday: Short Ribs with Chipotle Cherries and spinach salad;

Saturday/Sunday...off to the lake for the weekend with a couple of friends and their kids. It should be a good time.

  • Oh good. I am glad your posting your menus again. I got so many good ideas from them. I think I will try the squash and corn quesadillas as I haven't been able to eat meat ever since watch FoodInc. a couple weeks ago.

  • It's interesting about not eating meat. I haven't seen anything that would turn me off of meat, but I was just having a discussion with Dallas about this very thing. Maybe it's my old age (lol) but I am starting to develop this aversion to eating meat that came from a place that I do not know. I know, weird. I have family who are farmers and raise cattle and chickens. I told Dallas I wanted to start buying stuff from local farmers (maybe family) so I know these animals are treated properly, not abused or unhealthy, etc.
