Zucchini Bread Recipe?

Do any of you have a yummy zucchini bread recipe? I'm craving it big time! Also, can someone post the link for the cookbook? Thanks.

  • This is closest to what I use.  The changes I make include reducing the oil to 1/2 cup from the full cup, replacing 1/2 cup of flour with flax meal, substituting splenda for sugar, and adding as many sultanas or dates as I want.  Also, if I need to go eggless, I'll use this handy egg substitution method which does not change the consistency. Depending on the overall consistency, you may want to add more oil.

  • This one I LOVE...I have some in my freezer now. I don't put in nuts or raisins or the lemon extract:

    2C sifted flour

    2 Teaspoons baking soda

    1 teaspoon salt

    1/4 teaspoon baking powder

    3 1/2 teaspooins cinnamon

    3 eggs

    1 C vegetable oil

    1 1/2 C sugar

    2 C grated zucchini

    2 teaspoons vanilla

    1 teaspoon lemon extract

    1 C rasins

    1 C chopped walnuts or sunflower seeds

    Sift Flour, baking soda, salt, baking powder, and cinnamon into a bowl. Combine eggs oil sugar zucchini vanilla lemon extract in another bowl; beat thoroughly. Sift flour mixture into egg mixture until smooth. Add raisins and nuts. Stir to combine. Pour mixture into greased 9x5 loaf pans or muffin tins. Back 40 min for loaves, 20 min for muffins. They are done if center springs back when lightly touched. Oven Temp 350.

    A lot of stuff but they are by far the best I have ever had

  • I just made this one this week with zucchini from our garden! It was a huge hit at home and at work.

    I used wheat flour instead of white and did half brown sugar half white sugar, and didn't put any nuts in (but that's just because I don't like nuts in bread/cake/cookies)
