Side dish help-Hawki & others

I need your help ladies. We are having a birthday celebration for MIL on Sunday. I need a side dish to bring and salmon is the entree. Any suggestions/ideas? I'm not a seafood person so don't know what would compliment the fish. Also if you have any chocolate cake ideas too, I am making the cake as well. TIA!

  • I really like this salad (recipe below).  Especially with grilled salmon.  Whenever I make it I get raves from everyone. 

    As for chocolate cake, I don't have the recipe at work, but I have a super easy one that actually uses a mix, raspberry jello, fresh or frozen raspberries & red wine.  I haven't taken the time to convert it to a non-mix yet, but plan to in the future.  If you're interested I'll post it tonight.  Otherwise, the Irish Car Bomb Cupcake recipe that is going around is so good (I think Hawki has it in her blog) and you could probably convert it to a cake or modify it to be more summer-friendly.

    Black Bean Salad

     

    Dressing:

     

    ? tsp. salt

    3 cloves garlic ? minced (or use garlic press)

    ? tsp. cumin

    1 tsp. Tabasco (I like the Chipotle flavor best, but use what you like/have)

    1 tbsp. cilantro - chopped

    2 tbsp. balsamic vinegar

    4 tbsp. olive oil

     

     

    Salad:

     

    1 can black beans ? drained & rinsed

    1 or 2 ears of corn ? blanch in boiling water for 3 min., run under cold water to stop cooking and then cut off cob

    1 cored/seeded red or orange bell pepper ? diced

    1 med. Sweet onion ? diced

    5 -6 (or more) radishes ? sliced

    2 med. Carrots ? peeled and sliced thin

     

  • For a side dish...

    Maybe do a light pasta dish like this parmesan and sun dried tomato orzo or pesto pasta salad.

    If the salmon has more of an Asian flavor - maybe something like this Asian coleslaw. 

    1 package cabbage slaw or broccoli slaw mix

    6-8 green onions, diced

    1/4 cup sunflower seeds or slivered almonds

    2 packages ramen noodles (1 chicken, 1 oriental)

    1 cup canola oil

    1/2 cup apple cider vinegar

    1/2 cup sugar

    Soak noodles in hot water for about 5 minutes until soft, drain and toss with cabbage and green onions.  Mix oil, vinegar, sugar and spice packets from Ramen.  Pour over cabbage and toss with nuts and serve.

     

    For chocolate cake... I use this Hershey's Perfectly Chocolate Cake recipe for a base recipe most of the time.

    Cookies and Cream Cake

    I've also done this Texas sheet cake which got rave reviews.

    Hawki-the orzo sounds so good. I was also thinking about maybe a risotto? I saw you had one in your blog. Any thoughts?

    Hopscotch-I love asparagus too. How do you prepare yours? I usually just steam it but wasn't sure if you had any other ways to make it.

    I just steam mine too and add a little salt.  I have done a lemon-butter sauce for the fish before that I drizzle over the asparagus too.

  • Sure!  I'll post the cake recipe when I get home tonight.

    I love to roast asparagus.  Just drizzle with olive oil and sprinkle with sea salt & roast at 425 for about 15-20 minutes.  I usually use a 13x9 pan and don't cover it.  So simple & delicious!

  • Here's the cake recipe:

    Chocolate Raspberry Red Wine Cake

     

    One box chocolate cake mix

    1 pkg. (3 oz.) raspberry jello

    ? cup vegetable oil

    4 eggs

    ? c. dry red wine

    ? cup fresh or frozen raspberries

     

    Preheat oven to 325 degrees.  Grease & flour (or cooking spray) a Bundt pan.  Mix cake mix, jello, oil, eggs & wine on medium speed until smooth.  Gently fold in berries.    Pour into pan and bake one hour.  Cool in pan before turning onto serving plate.  Dust with powdered sugar.  It?s great on its own or you can serve it with whipping cream or vanilla ice cream. (Disclaimer - this cake was adapted from the Preston Premium Wines family cookbook.)

     

  • I was going to suggest risotto but your post made it sound like you wanted to bring the dish already made.  Risotto doesnt really travel and reheat very well as the texture becomes a little off.  If you are going to make it there - the smoked mozzarella risotto in my blog is fantastic.  The Italian sausage one is also really good but probably doesnt combine well with the salmon. 
  • Thanks. I do need to make it ahead of time, so I will not make the risotto. Orzo it is a believe...unless i do the pasta salad. Decisions, decisions.
