I'm in a lunch rut. Help me get out! We've had sandwiches (boring just turkey/cheese) type sandwiches for too long. What do you ladies usually make for lunch at work? MAJOR bonus points if a recipe is added.

And my favorite is chicken salad sandwiches. Make a big batch on Sunday and you will have more than enough to last the week. My mom makes the best chicken salad. It is weight watchers but it is so good you would never know. I googled and I think this is the recipe. If not, I will update it later!
if you're craving a sandwich: hummus with cucumbers and lettuce on whole wheat.
if you're craving something hot: chili! mmm.. i pack the leftovers in lunch sized containers. before you leave for work, throw some cheese on top and just heat it up.
recipe: 1lb ground beef, 1/2 a yellow onion, 2 cloves of garlic, 2 tbsp chili powder, 3/4 tsp salt, 2 cans tomato soup, one can whole kernel corn, two cans diced tomatoes. frito chips, cheese and sour cream.
-chop onion and mince garlic. brown ground beef with onions and garlic. add cans of tomato soup, corn (with liquid in can), tomatoes. stir in chili powder and salt. bring to a boil and simmer for 20 mins or until most of the liquid is evaporated.
-top with chips, cheese, and sour cream.

since my "lunch" is in the evening (about 5 or 6), i tend to prefer dinner fare. i eat lots of leftovers.
I prefer to cook one big casserole-esque meal every week, typically in the crockpot, and then we take leftovers for 3ish days, because they're one dish warm up type meals.
after that mix it up with sammiches and hummus/tabouleh, or other protein-rich "salads."
when greens are good i like to have a salad with lots of mixed veggies, broccoli, peppers, and a hard boiled egg or two.

I am definitely a leftover eater. Chili is great, or soups too.
If you want to try a really good pasta that has some healthy broccoli in it as well as protein, and makes GREAT leftovers try this.
3-4 crushed cloves of garlic
1/2 onion chopped
Head of broccoli (1-2 cups) cut into pieces
Kale, remove from stems, leaves only, chopped (4 cups or so)
1 Tablespoon Crushed Red Pepper
Salt and Pepper to taste
3 Chicken Breasts (already seasoned and baked or grilled)
4 Italian Sausages (grilled or cooked whatever way you prefer) (I use chicken sausage, cuz H doesn't eat pork)
1 box of pasta (I prefer rigatoni, farfalle or penne)
Olive oil (I use a good amount, maybe around 1/2 cup)
First cook your chicken and sausage. I usually season the chicken with some itallian seasoning, garlic, pepper and salt and either grill or bake. The sausage I usually grill. Cook the pasta according to box. Cut chicken and sausage into pieces after they are cooked and set pasta and meat aside.
Steam broccoli but make sure you don't overcook and it is still firm.
In a very large wok or large pot, heat 3 tablespoons of olive oil and saute garlic and onions on medium high. Sprinkle with some (maybe around 1/2 tsp) of the pepper flakes, salt and pepper and saute until transparent. Next put in the meat into wok or pot and sprinkle with some more of the pepper flakes, salt and pepper. Add a bit more olive oil. Then turn heat down to medium and add in the cooked pasta, some more olive oil, pepper flakes, salt and pepper. Make sure you continue to toss the pasta and distribute ingredients evenly. Throw in the broccoli and the kale and add the last bit of pepper flakes, olive oil and more salt and pepper to taste. Cover and let the kale and broccoli steam for around 5 minutes making sure to mix ingredients every minute or so so pasta doesn't burn.
Serve with some asiago or parmesan cheese on top.
This is one of my all time favorite pasta dishes, since its got your veggies/greens and protein, and its REALLY filling and lasts awhile.
