Ugh. House hunting sucks.
So we finally found a house we love. Problem number one - it went on the market last week. Problem number two - there's apparently already an offer. I'm so depressed about this.

I concur with Cali. Throw out your "strategy." I don't understand letting a house that you feel something for, fall away because you want to wait and low ball. If you feel it is your house, go in there and take it (and compete with the other offers).
However, you know that this is me coming from my seller's perspective. It would kill me to know that somebody out there loves my place, feels like it could be their home, and they are just waiting for a few months to come in with the kill.
We have seen several houses that we love, but can't do a damn thing about it. I really want to tell the owners how much we like their place and how we can see ourselves building our lives around this place they once called home, but we can't.
It's impossible not to get too emotionally attached, but if you come forth with your best possible offer right off the bat (since it's already getting an offer within a week of being on the market, I'd say it's priced right already) and get beaten out by someone willing to pay more, just try to tell yourselves that the other people overpaid.
I *think* you can submit a Price Is Right style offer where you say you'll pay $X amount over whatever their top offer is (up to a certain number). That might ensure you a win.

It's hard in a situation like this. We went into with the attitude of we'll offer what we can and let the chips fall where they may. It's hard to do once you've fallen in love with a place.

We looked at tons of house and bid on 8 before we finally were the winning bid. Looking back now I know we got the right one. I was in love with a lot of those houses but knew that everytime we didn't win the bid it wasn;t meant to be.
We had a price that we would not go over for any house and once bidding got there we had to give up. It was rough but worth it in the end.
