Bakers come in please!

My moms birthday is August 23 and her favorite dessert is key lime pie. I thought about making her a key lime pie (instead of a cake) and I still like that idea, but then I was thinking what if I made her key lime pie cupcakes?! YUM. Then it's cakey and pie-y.

So this is the recipe I'm thinking about going with. What do you think? I want the frosting to look better, more professional looking I guess. And I'm not using those chocolates (hello! $44 for a box of seashell chocolates? no thanks) but I am going to sprinkle the tops with crushed graham crackers.

I'm a good baker, so the cake part I'm not worried about. It's the frosting. ::sigh:: I can make a good frosting, I'm just a disaster when it comes to applying.

  • my cream cheese frosting is similar.... 1 bar cream cheese, 1 stick salted butter, 4 c confectioner's sugar, 1 tsp vanilla.... you can add the lime juice in there when mixing the room temp butter and vanilla.  My favorite tip.... do NOT bring the cream cheese to room temp -- mix butter, vanilla, lime - then add sugar 1 cup at a time - THEN cube up the cream cheese and toss them in a few at a time.  The frosting will keep its shape better and will have less of a tendency to melt.

     why not garnish with a candied lime?  I found this for you.... 

    Oh -- use a pastry bag to decorate.  They're only a few dollars - and if you can find a big tip, get a 1M.  That's the best!!

  • Sounds like Lisa just about covered everything, but I wanted to add that if you want, you can make the chocolate shells for much less than $40.  Just buy a mold at Michael's or another craft store and use melted almond bark and you're done!
