She is doing ok! She is dealing with being forbidden to she the dumb arse boyfriend and I have her going to a counseling group for teens. So she can talk to people who are objective.
My father in law is losing his mind since he lost his wife. Stepmother to my hubby. If he lives even 3 more months I will be shocked and I dont know what Bernie is gonna do. But his dad is just lost without her.
How was your weekend. Other than dealing with his dad ours was great. I am perfecting making homeade salsa!!
I'm glad your daughter is doing better, but I'm really sorry about your FIL! We have a widow in our church whose husband died about a year and a half ago. They were married just shy of 50 years when he died and had never spent a night apart from eachother. It was awful seeing how much pain she was going through. She's doing alot better now, her kids and grandkids are with her most of the time and that's helped her alot. I'll be praying for your FIL!
We LOVE homemade salsa! This is the recipe I use
1 can Hunts diced tomatos (basil, garlic, and oregano flavored)
1 can mexican flavored rotel
1/4 cup fresh chopped onions
1 tsp fresh chopped cilantro
salt & pepper to taste
I put everything in the blender to get rid of any big chunks of tomato but I only pulse it a few times since we like our salsa semi chunky.
My Salsa is totally from scratch except for tomato sauce
10 to 12 Roma tomatoes
1 medium onion
3 jalepeno peppers
2 habenero peppers
2 anaheim peppers
1 bundle of green onions
2 tbls minced garlic
1 bundle fresh cilantro
1 regular sized can of tomatoes sauce
seasoning salt
black pepper
cajun seasoning in yellow can (can't remember the name)
first I like to wear rubber gloves laytex gloves I keep a box around the house for hair dying n stuff like that.
cut in half the peppers all 3 kinds and remove all the seeds and membranes of the peppers. Then cut them into thin strips on a medium heat in a frying pan cook them a little browning them a tiny bit on each side if you miss a few not a worry. Place all of them in the food processor and chop them finely or blender the add white onion and chop. cut 8 to 10 tomatoes in quarters and chop. You may have to dump sections in a bowl as you go if you have a blender. Then cut up cilantro a bit then add to mix and chop then add garlic. Cut up 2 tomatoes by hand and green onion toss that into a bowl with everything you have put into the blender. to 2 tsp of seasoning salt (I use lawery's) sprinkle the top with cajun seasoning, then pepper to taste.
Note when sauteing the peppers in a non stick pan put on your fan the steam that comes off of them will make you cough as it is spicy. This also tones down the spiceness from the peppers. If you like really hot salsa then don't saute them.
typing that up makes me feel like I really need to start a blog! Hmmm!
I made that this weekend and will probibly make guacamole tonight to go with it. For burgers he doesn't know he is making yet. hahahaha!!!

Andy sorry for not answering your question earlier but our weekend was great! HH had to work Saturday morning so I cleaned house and weeded the flower bed. That evening we went to the mall and out to eat. Yesterday we had church and ate dinner with my parents. Then me, my mom, and my little sister went shopping while HH went with my dad and other sister to cut grass at dad's hunting camp.
I love making new things! If I could just hang out in the kitchen I would everyday well most days but I can't for some reason that doesn't pay the bills.
We went out on Saturday night as well. First to Claim Jumpers and then to a comedy club it was fun. The 2nd guy was so friggin funny! Then back home oh and we bought a couch, loveseat, oversized chair and ottoman that are awesome and we love them
The salsa I make is actually better the next day after the flavors have had time to sit and blend together. I usually make it in the evening and put it in the fridge overnight.
