Hi all. I hope you had great long weekends. Ours was cut short Sad We went out to the camper, and were having a great time, until the water heater busted and leaked water all over the camper and outside. So, we had to pack it up and pull it into the shop for repair. Hopefully they'll have it fixed for this weekend...fingers crossed.

Here's what we're eating this week:

Monday: Marinated Chicken w/ green and yellow beans and corn on the cobb;

Tuesday: Beef and Coriander Burgers w/ salad;

Wednesday: Leftovers;

Thursday: Breaded tilapia w/ wild rice and roasted cauliflower;

Friday: Clow Cooker Pesto Chicken and Sweet Potato Layered Dinner.

  • Yeh, and the warranty is up, so we have to pay for the repair. Bummer.

    Nope, we passed. We did a ton of number crunching, looked their financials and decided not to move forward. We've got so much on the go, and we just couldn't commit to starting anything new right now. I am a bit bummed but I am sure another opportunity (perhaps even with the same company) will be there for us when we can take it on.

  • Boo on your camper.  hopefully the repairs don't cost too much.  Your menu sounds delicious!
