Re: What's cooking?

  • We just got a vitamixer (awesomeness!!) so I'm using it and making homemade tortilla soup (in about 5 minutes!), and then for dessert I'm making homemade vanilla ice cream (in about 1 minute!) with almond milk (lactose-free for H!) and just finished making the homemade chocolate syrup for the topping. :) All is VERY healthy, but dinner in dessert in under 10 minutes! Woot!
  • We are having homemade pitas with roasted turkey breast, bacon and avocado.
  • Z I think I'm gonna need one of those mixers!! Was it expensive?

  • I have a meeting tonight and then we're going to my parents' house for chicken and steak kabobs for a late dinner.

Looking forward to not having to cook!

Yup, it IS expensive sw, but sooo worth it! It's like a blender, juicer, food processor, chopper, (maybe more?) all in one! You can make very healthy things super fast! We used to juice almost every day (veggies mostly), but knew we were missing a lot in the pulp leftovers. Not anymore! Any you can make soups in it (from the friction from the movement, NOT from a heating mechanism!), desserts, sauces, dips, dressings, marinades, smoothies/beverages, etc!! And literally all in 5 minutes or under. It's AMAZING!! We watched the demo at costco and tried like 4 different things in it (soup, 2 smoothies and a sorbet) and all were DELISH and freshly made.

Umm, so there's my infomercial for the day! :-D

  • I am a horrible wife and picked up Popeye's chicken on my way home.  I made dinner last night in the oven and it heated the whole house up.  It is entirely too hot outside here to be cooking...well at least cooking anything with the oven.
  • H said he wasn't hungry when I asked him what he felt like having, so I decided I'd make myself some breakfast!  Waffles or pancakes felt like too much work for one person, so I had toast, a couple poached eggs, and applesauce.

Brownies are in the oven for dessert :)

  • Bowtie pasta with italian meatballs and garlic bread. Yum.

  • Z- My parents used to have one of those vitamixers. It was awesome. BTW, mind sharing your soup recipe?

    Show me those nails! :o)

  • Leftover spaghetti (made the sauce 2 Saturdays ago).  I wanted H to pick something up, but he had to work late.  I bit the bullet and defrosted the sauce.

  • Last night we had grilled pork chops, and mixed veggies. Tonight, it's chicken alfredo with spinich. We haven't had pasta in MONTHS due to my dieet and the wedding, so H is beyond excited (he's 100% Italian and is having carb withdrawals!)
