A good dinner last night--thought I'd share

Hey ladies--here's my post of the day.  Last night I made a pretty good dinner and it seemed pretty easy.

It's a shrimp scampi-esque meal with whole wheat orzo

Basically, I cooked the orzo as directed on the package.  when it was nearly done, I started my shrimp concoction.  First, I caramelized a small onion with a tiny bit of butter and olive oil and 1 minced garlic clove.

Then I took my pound of shrimp, pulled the tails off and threw them in the pan with a little more butter and olive oil (into the same pan with my onions and garlic).  Salt and pepper the shrimp, then I took 1/2 a large orange and squeezed it over the shrimp and onions. 

While that was simmering, I cut up a tomato into small "bits" and threw that in the orzo, which I had drained and was sitting in the original pot by now.  I kept the lid on the orzo pot so that the tomatoes would sort of cook with the orzo a little bit.  

Once the shrimp was done, I put the shrimp over the orzo/tomato mix and then pulled the onions out of the orange juice.  The flavors were INCREDIBLE together.  And it's pretty healthy.  I didn't even use a tablespoon of butter and I kept the cooking temps low so that I could use olive oil.  

I had done a similar recipe to this that was from Cooking Light, but it used the more common shrimp/lemon combo and no onion.  For this recipe I did also sautee a little mushroom for DH with the onion and put it with the orzo before cooking the shrimp.  He enjoyed that little addition as well (I dislike mushroom).
