Edith's (apparently not to be missed, but you've got to book it in advance)
Nick San - Japanese/Sushi and "Nobu quality" according to my SIL
The Office - good for lunch. Right on the beach.

My cousins have a place in Cabo and we were just there in May for my cousin's wedding. Edith's is pricey but super yummy and the office is really fun, it is like the unofficial Cabo hangout.
Baha Cantina on the Beach is so-so food but amazing experience.
