Anyone Eat a Gluten Free Diet?

I'm considering it.  After my acupuncture visit, I'm really thinking about it.  The acupuncturist and I talked about how gluten and dairy affect a lot of people (I'm at my wits end with bloating) and I'm willing to give it a go.  I bought "Living Gluten Free for Dummies" today to just find out why people do it, how it changes your body, basics on things to swap and avoid, etc. 

I'm curious to know if anyone has adopted a gluten free lifestyle and, if so, how it's changed your body.

  • I have a few friends with celiac disease. The only thing they really miss is bread. The one thing I have learned from figuring out how to cook for them is there are lots of great gluten free dessert blogs out there!
  • you might want to try a yahoo groups search for a local support group - there's one here in DC and they discuss where to find a lot of different GF foods locally.  I've toyed with the idea myself, but haven't committed to it yet.
  • i avoid gluten and dairy -every so often i cheat but for the most part i am gluten and dairy free. Honestly it has made a huge difference especially giving up dairy.  My allergies do not bother me any more, my uterine fibroids shrunk and pretty much don't bother me, and i lost a load of bloat.  In all honesty i have always been thin, but when I went off bc and adjusted my diet people kept telling me how lean i looked-i don't know if i actually lost any weight well maybe a little but lost the puffiness.  Because I still need carbs for my body to be happy we eat brown rice pasta,  if we want ice cream we use coconut milk ice cream but personally i like dairy free chocolate sorbet.  I am not really a bread person-every so often i cheat and eat it.  There are so many resources for being gluten free now-its worth it to give it a try and if you feel better you won't end up missing it.  Or you can occasional eat it.
  • i did gluten free last year at the recommendation of my nd. we also did a gluten tolerance test...sad to say, i should not be eating gluten.  anyway, i lost almost 20lbs in 3 weeks...it was crazy.  i didn't realize i had so much inflamation in my joints or bloat.  i could actually see sexy muscles :)

    i felt a lot better too.  more energy, etc.

    I avoid wheat, but eat other gluten contatining foods like spelt and kamut.  I was never tested for Celiac's or anything but do notice I bloat and my eczema gets worse when I eat wheat and diary products.  When I cut out wheat (along with several other things) I too, lost about 20 pounds.  I have a pitiful food blog with some wheat free (but not gluten free) recipes.  Link in sig. 

    My naturopath has a book, which explains why people get bloated and experience other problems.  Gluten and dairy are just a part of the problem.  Actually, DH and my sister went to see him and is doing his eating program right now.

  • Thanks ladies!  I'm going to give no dairy and no gluten a try and see if I feel better.  It's worth a try!  I don't *think* I consume much dairy, but I do have 1 cup of milk every morning when I make my latte.  What's a good substitute?  I do NOT like almond milk, that I know.  Maybe Rice Dream?  Giving up cheese will be tough since that is the one food I'd choose to live on if I could.

    you could use heavy whipping cream since all the proteins and sugars are stripped out...it's just fat.   i use coconut milk A LOT, love the taste and leaves your coffee super creamy...you can also cut it with water.
