Food stuff

1.  made a zucchini casserole last night that was easy and delishious.   Layers of sliced tomato and sliced zucchini with italian seasoning and whatever cheeses are in the fridge.  we had parmesan, cheddar and herbed goat cheese.   freakin yum.   bake for about 30 minutes at 375

2.  i need a baked bean recipe, not a slowcooker one, BAKED beans.   Anyone have a good recipe?

  • I have no baked bean recipe because beans are gross.  I'm making this tonight and am hoping my husband doesn't realize it's Indian food.  I'm calling it "tangy chicken skewers".  I want to have some naan with it too, but I think that'll blow my cover.

    Unlike Cali, I don't think beans are gross.  But I do think baked beans are gross, so you'll get no recipes from me.  I'm trying to have a clean out the freezer/pantry week, so tonight's dinner will involve the twisty pasta, ricotta cheese, and a big can of tomatoes.  I'm hoping I've got some mozzarella so I can make a baked ziti like thing.

  • My baked beans "recipe" involves beans from a jar, which I'm assuming wasn't exactly what you had in mind, but here it is -

    1 glass jar of baked beans (b/c beans in a glass jar are fancier than the canned variety).

    Add maple syrup, BBQ sauce, chopped smoky links and layers of raw bacon on top.  Bake in a casserole dish at 375 for say 2 hours until the bacon is cooked and all is bubbly.  Yuuuuum. 

  • I hate baked beans and so don't make them, because I can't tell if they're seasoned right or not, since they all just taste like nastiness.  My H seems to like the Bourbon & Brown Sugar flavor of Bush's Grillin' Beans.  I dunno if those are available in Canadialand, though.

    The zucchini/tomato casserole sounds delicious.
