I need a moist banana bread recipe

I am making DH 86 year old grandfather some Banana bread and I want ti to be the most delish bread EVER!  He deserves it, he is so darn adorable!

  • I always use this one.   Be careful not to over-stir it though otherwise it will be too dense.  GL!

  • I second Jillian's recipe.  It's the best I've ever found.  Makes good muffins too.

  • This is the one I always use too.  Usually I put a small box of pudding, usually coconut in the mix too, seems to make it even moister! 

    Also agree....don't over mix!

     

  • There is one in my recipe blog (link in siggy). The more bananas you use, the moisture it is. I think I even have some hints on how to get a nice, moist inside and lovely crust. :o)

    I've used MissyNa's several times and the bread gets eaten by everyone before it even cools. I follow her tips (more bananas, bowl of water in oven) and it's sooooo good.

  • Someone gave me a banana bread recipe from cooks illustrated. 

    I don't have the recipe with me, but it used twice as many bananas as my normal recipe.  It also had me microwave the bananas for 4 minutes, then put them in a strainer.  The bananas released a juice, which it then had you reduce.  That way you got more banana flavor, without too much moisture.

    I also agree with the bowl of water in the oven.
