Our green bean plants are producing out of control. I love eating them, but I don't want them every night. Have any of you ever vacuum sealed and frozen fresh veggies? I'm afraid it will make them soft, but I have no idea. I would love it if I could have a store of them in the freezer to eat during the winter.
Thoughts?
I'm also thinking about doing it with our corn when it's ripe

I froze green beans about a month ago and they seem alright so far and I just put them in zip lock freezer bags, we don't have a vacuum thingy. I don't know about corn w/o cooking it, but we "can" corn. It really doesn't go in a can, but its a cooking process and then bag and freeze it. If you want the recipe, let me know.
If you freeze leafy greens - they'll wilt upon defrosting..
The alternative is to freeze them and use during the winter for soups, and cooking purposes.

I found a website saying you should blanch green beans first so I may try that, but Maria I would love to have the recipe you used.
Fanny- I would love to be able to freeze lettuce and spinach to use in the winter, but I figured that wouldn't work very well

You should blanch green beans first. I've done it and put them in a ziploc and it works great.
I also freeze zucchini and squash, but I don't blanch it. I either cut it into discs or i grate it (for breads, muffins etc) and bag it in the exact amount I need for certain recipes.
