XP: Fantasy Football Draft Party

We are having our first FF draft party this weekend.  I need some menu ideas.  We are definitely doing burgers and hot dogs.  Some other things I have that can be changed are buffalo chicken dip, chips and salsa, grilled corn on the cob, and cupcakes....I'm looking for other things to give some variety and to have some things stay out so everyone can snack here and there.  Any great apps or sides?  TIA

I also posted this on the what's cooking board.

  • I love making the bacon wrapped peppers on Pioneer Woman's site. Guys normally love them. My DH hosted a bachelor party at our house a few weekends ago and this was our menu:

Grilled meats, buffalo chicken dip, chips and pretzels with french onion dip, the bacon wrapped jalapeno peppers from Pioneer Woman, A yummy Ranch pasta salad, chips and guac, a mixed fruit bowl and a cheesy rice with jalapeno dish that one of the guys brought. I wasn't there for the party but I guess they liked everything since when I got home that night there was no food left in sight!

  • I'd say throw in some veggies/dip or cut-up fruit--they're easy finger foods people can grab throughout the night, and there's not much work for you to do.

A pasta salad might be good too; this one is my go-to recipe for summer get togethers: Lemon-Garlic pasta salad

  • 7 layer taco dip is always a crowd pleaser at our parties...so is spinach dip with veggies.

  • Our new favorite appetizer is a chopped mix of fresh mozarella, parsley & prosciutto on top of a baguette.

I buy fresh Italian bread and my husband will throw them on the grill of literally one minute.  They have a very good bold taste and are perfect for party's when you are grilling because they come off the grill so fast.

If you are in a rush you can also do them really quick in the microwave!

My new obsession after dining at Poca a Poca in Hyde Park is charred corn. There's was SO good I'm trying to recreate it at home!
