I'm going to the Zac Brown Band concert Saturday (I know you're all jealousE).  There will be about 16 of us and we'll be tailgating before hand.  We'll have a small grill and will have burgers, dogs and wings.  we don't want to have to worry about utensils so I need something you can eat with your hands, can heat on a grill or eat cold.  any ideas?

    Gourmet gaucamole. Slice a large red onion into 1/4 in rings, dizzle with evoo and roast at 400 until soft. Let cool and dice. Also roast (or grill or use frozen) 2 ears of corn. Let cool and cut off the cob. Combine onion and corn with 4 avocados diced, a jalapeno minced, a garlic clove minced, and chopped cilantro to taste. Add salt and lime juice to taste (I use about two limes) and a little evoo. You can also add a rinsed and drained can of black beans.

    I'm feeling great!  I need to stop weighing myself every day though.  I was bummed all week because I had only lost 1 pound.  Then I woke up this morning 2 pounds lighter.

    How about a little chicken fried?  I'm sure you'll have the cold beer (PBR?).  :)  Sorry, I couldn't resist.  I also love themes, so I would do stuff like that.  And make sure I had jager (sp?).

    ETA:  I have nothing else to offer but the fact that I'm super jealous.  Have a great time!

    pumpernickel bread and spinach dip

    Bruschetta (pre mix the tomatoes, oregano and garlic and olive oil grill the bread and spread with goat cheese before putting the topping on.
