can you help me think of...

...a good and quick meal to make for 8 people?  My sister, parents, and grandparents are all visiting this weekend and I'm serving one lunch and 2 dinners for them.  I'm doing tacos for one dinner, but can't think of anything appetizing for the other 2 meals. I'm looking for quick and easy.  I can always do hamburgers or cold cuts and salads, but just not feeling that right now.

Ideas?

    I made this for dinner last night and it was one of the easiest meals I've ever made.  It was really good too.  I served it with steamed fresh green beans.

  • Lasagna, breadsticks, and salads.  That's easy.

    Or spaghetti, breadsticks, and salads.  That's easy and quick.

  • I was also going to suggest lasagna. 
  • Darn I should also mention that I'm lactose intolerant so it has to be dairy-free (well it can have milk/butter b/c I can substitute those things, but cheese is harder).

     All the good quick recipes have cheese.  

    Spaghetti might work if it rains or is a bit cooler one of the days.  We don't have air conditioning, so hot spaghetti on a hot day is probably not a great match.

    This is a really easy, really good chili recipe. 

    You could do pulled pork sandwiches, too.  Meijer sells Curley's BBQ Pulled Pork in bigger containers.  It's really good.

  • What about grilling pizza? Each person can make their own. Oh darn. Lactose.

    My favorite summer meal is a roaster chicken on the grill. I cut the chicken open through the breast, smear it with an olive oil & Good Seasons packet mix, and grill it for about an hour-hour 15. It's SO good. The skin gets crispy and the seasoning is so good. I also do corn on the cob with it, right on the grill. Leave it in the husk, pluck out the "fuzz" and grill it on each side for about 3 minutes or until the outside gets browned on each side. It's really moist and REALLY good. Plus, it doesn't heat up the house like boiling water. Grab a watermelon and call it good.

  • In that case, I think a pasta salad, grilled or roasted chicken, along with some fresh veggies and hummus would be nice.
  • One of my favorites for a group is grilled flank steak, plus a nice green salad.

     Here's one of our go-to recipes.  (I use the marinade w/ flank, and skip the peaches)  Come to think of it, you could do this w/ pork tenderloin too.

  • You know, when I do my spaghetti sauce (I make it from scratch), I make the sauce on the stove just to put it together, then cook it in my crockpot all day. It comes out amazing!

    Then you just need the water for the spaghetti, and that doesn't heat up my house much. If you want garlic bread, grill it on the grill outside.

    I actually use a Meijer brand "small, young chicken" but they also have roaster chickens, which are bigger. The small one fed three adults and Mere the last time I made it. The roaster chicken would be enough, but would also take longer.
