Please excuse my ignorent question but how do you can? I am thinking you use a pressure cooker or something? I have no clue how to can but if it is easy (and cheap to do) I might be able to do that for christmas.
I have so much stuff running in my head for christmas I better start now

I bought a huge canning pot that came with a rack, and a canning kit from Walmart (I never use the headspace tool): http://www.freshpreserving.com/pages/home/258.php?pid=292&product=286
I had the jars from last year, and waiting for them to go on sale in the stores now so I can stock up again.
You have to follow a recipe- and dont change anything in it otherwise it will spoil/have botulisim.
When you are ready to start your recipe, I always wash my jars and lids (not the bands) in the dishwasher and keep them in there to stay hot, bc when you put your food you are canning into a jar, both have to be hot. It's easier than boiling the jars, less messy.
I made chow, or picadilly relish last night and was told it tasted just like my granny's so another success for me
Your hubby might like it since you say he likes country cooking- you put it over your pinto beans like a relish.
