I offered to host an engagement party for my SIL. Her wedding is shaping up to be pretty casual (at a local park with catering by a local BBQ joint), so I want to keep the engagement party really casual too.
Hezz raped some kickass paper for me. I can't wait to see the invites.
Anyway, the halp part. There may be up to 60-70 people attending, although I'm hoping for around 50. The party is on a Saturday and I have to work all day Friday, so I'm trying to keep things simple and affordable. I decided to just order a couple of deli platters for sandwiches. I'm also going to make potato salad and pasta salad and a veggie tray. Some chips and dips for appetizers and cookies and cake for dessert.
Does that seem like enough? Is there anything I'm missing?

I do think what you're planning is great for a park setting, but if you feel like adding something those pulled pork sliders I did this weekend are ridiculously easy for how delicious they are. All was prepped ahead of time, too.
Cook pork roasts covered with BBQ sauce on low for 12 hours. Fry up some very thinly sliced onions and green peppers.
Pill apart roast with forks. Add the ppers and onion some worstershire, chili sauce, and a splash of apple cider vinegar. Keep on low for two more hours. Serve on white dinner rolls. I grilled pinapple ahead of time and put it on those, too.
