Fiesta Lime Chicken for TheWop
I LOVE this recipe. I love it more than the actual Fiesta Lime at Applebees.

I don't use the parsley or the ginger. It's good if you can marinate the chicken longer, but it's not that necessary. I've served with brown, Mexican and white rice. I prefer the Mexi, the H prefers white. I slather the breasts with the sauce b/c it's good mixed with the rice.

I made this once years ago. I'll have to thaw some chicken and make it this weekend.
I'm all about the extra sauce. If I have some, I throw a shot of tequilla in the marinade, since they used to call it Tequilla lime chicken.
It has tequila in it. I usually add extra ;o)
Honestly, I didn't even look at the recipie. I remembered the source, and knew it was good!!!
I umm... check out the tequilla before I put it in too. I have to make sure it's still good.
