  • I just got back from HEB with all the ingredients and they're in my crockpot now!

    PSA: the HEB frozen chicken breasts are part of this week's meal deal, so you get rice, rolls, salad and frozen fruit bars free. :) Bonus!

  • First thing DH said when he walked in: What is this heavenly deliciousness I smell? :) 

    I made it into quesadillas. I have never eaten chicken tacos before, I just don't like chicken in tacos. This I liked. And it's awesome it was so easy AND has leftovers.

  • 1 packet of chicken taco seasoning poured on the bottom of the crockpot.

    place 3 frozen chicken breasts over seasoning.

    cover with a container of HEB fresh pico de gallo, then 1/4 cup water and 1/4 olive oil. 

    Cook on low 4-6 hours. Flip half way if desired, but not necessary. Shred chicken, stir and cook on low for additional 30 minutes.

    Yeah, I wouldn't do the flip halfway thing. That seems like it would affect your cooking time.  Not that this is an exact science.  

    PS. I love using chicken thighs instead of breasts.  Much more moist.  YUM.

    I also use 4 chicken breasts and there is still plenty of juices to go around.

     

  • Also, if you don't have the fresh HEB pico on hand at home... you can always use a can of Rotel.  That is how I have always made it and it is delicious.
