Chicken Recipes

I need some delicious chicken recipes because I have a ton of chicken and we are tired of what I have been making.  The one qualification is it needs to be a recipe I can add cooked chicken to.

Thanks ladies!!

Re: Chicken Recipes

  • Chicken spaghetti! My fav!

I usually boil 3 to 4 chicken breasts with chopped oinions and bell peppers. When the chicken is done remove and add spaghetti. Do not drain spaghetti. Add a can of chopped tomatoes, velvetta cheese and shredded chicken. Put all of this in a pan and put in the oven at 350 degrees for about an hour or so. Makes a whole bunch and will have lots of leftovers.

  • Chicken Enchiladas:

Assemble in a 9x13 pan.  Roll grated cheese and your cooked chicken up inside of corn tortillas.  I think I can usually get 16 into the pan.  Drizzle one can of enchilada sauce over the top and then cover with a layer of grated cheese. Cook uncovered for 15 mins in a 350 degree oven.  Not exactly healthy but its quick and easy!

  • DH and I sort of made our own version of stir fry (we call it stir fry, but it doesn't have any veggies lol) The recipe looks kind of long, but it really doesn't take very long.

1 bag of boil-in-a-bag white rice
1 small can of pineapple chunks
    1 egg
    Vegetable Oil
    Salt & Pepper
    Ground Cumin
    Garlic
    Ginger
    Seasoned Salt

Boil rice as directed on box. In a wok, heat a little bit of oil (maybe 1.5 tbs if I had to guess). Pour the cooked rice into the wok once the oil is hot. Stir for a few minutes. Crack an egg into Wok (you can either move rice to one side and crack egg on the other side, or just crack egg into rice). Scramble the egg. Add seasoning. Add can of pineapple (you can add the juice from the can if the rice looks dry). Add cooked chicken.

  • Our favorite chicken dishes are enchiladas, king ranch chicken, and creamy mexican chicken pasta.

Enchiladas--pretty much the same as Copswife's recipe, but I make my own sauce using sour cream, chopped onions, flour, water, cumin, and green chilies.

    King Ranch Chicken:
Melt 1/4 c. butter in skillet.  Add 1 chopped bell pepper and 1 chopped onion, saute until tender.  Blend in 2 cups cooked chicken (cubed or shredded), 2 cans Rotel and 2 cans cream of chicken soup; heat through.  Layer about 4 corn or flour tortillas in bottom of 13x9 pan (you can tear them up or leave them whole), top with Rotel mixture, then about 1/2 c. shredded cheese.  Repeat layers 2 more times.  Bake at 325 for ~40 minutes or until bubbly.
**To reduce fat/calories I use low fat butter (and not the full 1/4c), corn tortillas or reduced fat flour, and reduced fat cream of chicken and shredded cheese.

    Creamy Mexican Chicken Pasta:
Cook 3 cups bow tie pasta (or any pasta really) as directed.  Drain and return to saucepan.  Spray skillet w/ nonstick spray, add chicken (I use 2 cans white chicken) and cook until cooked through.  Add cooked chicken to pasta, along with 1/2 lb (8 oz) Velveeta, 1 can cream of chicken soup, 1/4 cup milk and 1 cup salsa.  Cook on low heat until velveeta is melted and mixture is well blended, stirring occasionally.
**Again, to cut calories I use ff milk, 2% velveeta, and reduced fat cream of chicken.
This recipe makes a TON.  You will have a lot of leftovers if you make the full recipe.
