I need some delicious chicken recipes because I have a ton of chicken and we are tired of what I have been making. The one qualification is it needs to be a recipe I can add cooked chicken to.
Thanks ladies!!

Re: Chicken Recipes
Chicken spaghetti! My fav!
I usually boil 3 to 4 chicken breasts with chopped oinions and bell peppers. When the chicken is done remove and add spaghetti. Do not drain spaghetti. Add a can of chopped tomatoes, velvetta cheese and shredded chicken. Put all of this in a pan and put in the oven at 350 degrees for about an hour or so. Makes a whole bunch and will have lots of leftovers.
Almond crusted chicken...check my blog...I put up a link a few weeks ago with a website with super yummy recipes, including lots of chicken recipes.
I made the Almond Crust chicken with diced almonds and panko bread crumbs...super delish!
Chicken Enchiladas:
Assemble in a 9x13 pan. Roll grated cheese and your cooked chicken up inside of corn tortillas. I think I can usually get 16 into the pan. Drizzle one can of enchilada sauce over the top and then cover with a layer of grated cheese. Cook uncovered for 15 mins in a 350 degree oven. Not exactly healthy but its quick and easy!
I'll have to do this one night. Sounds super easy!

DH and I sort of made our own version of stir fry (we call it stir fry, but it doesn't have any veggies lol) The recipe looks kind of long, but it really doesn't take very long.
1 bag of boil-in-a-bag white rice
1 small can of pineapple chunks
1 egg
Vegetable Oil
Salt & Pepper
Ground Cumin
Garlic
Ginger
Seasoned Salt
Boil rice as directed on box. In a wok, heat a little bit of oil (maybe 1.5 tbs if I had to guess). Pour the cooked rice into the wok once the oil is hot. Stir for a few minutes. Crack an egg into Wok (you can either move rice to one side and crack egg on the other side, or just crack egg into rice). Scramble the egg. Add seasoning. Add can of pineapple (you can add the juice from the can if the rice looks dry). Add cooked chicken.
