What do you eat for lunch?

I just discovered Deli Creations Cracker Combinations.  It's like a Lunchable, but for adults.  Rotisserie chicken slices, reduced fat garden vegetable spread, tuscan herb flatbread crisps, and a mini Toblerone.  I think I'm in heaven!  And it's only 270 calories, so even better.  I'm also drinking a raspberry green tea, courtesy of Crystal Light.

I bought some horseradish dijon mayo yesterday and some cracked pepper turkey...I might break that out this afternoon.  It's a food day I guess.

  • In the fall/winter I usually make a big pot of something (soup, etouffee, risotto) and eat that all week with some raw veggies. In the spring/summer I make cheese and crackers with fruit, or several types of salad (e.g., pasta, fruit, and green) and take a little of each type. Lean Cuisines are my despiration (work up too late to grab something from the fridge) meal.

    DH eats leftovers for lunch. Chef Boy'R'Dee cold and straight from the can is his despiration meal.

  • Usually leftovers or a sandwhich. Today I had smartones pizza bits with grapes and a few red.fat cheez nips.

  • we usually do leftovers.  if i don't have anything leftover then something like grilled cheese or quesadillas.

  • The "adult" version of Lunchables are so yummy. I was surprised.

    I usually just grab whatever I can when I go to lunch. Most times, it's leftovers or a snack of some sort that I keep in my drawer at work. Lately, I've been running a lot of errands at lunch, so I'll just bring fruit or something with me.

  • Usually leftovers.  I do my own individual freezer meals (I think shansbride had the idea from her mom).  Get a pyrex or the like, line it with foil (I use wax paper), and put the food in there and freeze it.  When you're ready to eat, pull it out of the freezer and it should pop right out and be ready to heat.  Makes wonderful/healthy dinners for H when I'm not at home too.  Keeps him from eating burritos, corn dogs and pizza (most of the time).

  • I almost always bring my lunch to work, and it is very often a combination of leftovers, a veggie, maybe a fruit, and a little treat (like a square or two of dark chocolate or today, a fun-size Snickers!). Last night, I didn't cook, so I got two mini-meatloaf muffins out of the freezer, thawed them in the fridge, and packed them into my bento with carrots, red peppers and hummus, and some halved cherry tomatoes and the aforementioned Snickers.

    Tomorrow it will be leftover chicken and a salad. 

    Sometimes, I have to make something so I'll quick-cook a chicken breast in the convection oven or I'll make a pizza wrap on a low-carb tortilla.

    I always drink water--lots of talking through the day.

  • I take leftovers much of the time. If I don't have a true meal to bring, I'll bring some combination of fruits, raw veggies, hummus, cheese, crackers, yogurt, peanut butter, etc. Sometimes I prep salad makings and grill chicken on Sundays and take that for the week. Since I'm a teacher, I don't always get my promised lunch break, so I have to be flexible with my lunches. I also never eat out---I teach in a rural area and there are limited options.The school cafeteria is not an option for me Ick! except on pizza or baked potato day.

    During the winter, I make a big batch of stew, soup, chili, etc. on Sunday or Mondays and take that for much of the week.

  • The Deli Creations sounds yummy, I'll have to try that!

    My go-to lunches are:
    -turkey sandwich with baked chips or cheez-its, fruit (apple slices or banana), and/or some carrot sticks.  
    -Smart Ones meal (the chicken marinara flatbread is my fave!) with some veggies/fruit
    -Soup during the colder months with a turkey sandwich
    -Leftovers, depending on what they are

  • When I am home during the summer, I just eat whatever. And I tend to have a few smaller meals (more like snacks I guess) throughout the day.

    Since school is about to start, I will bring lean cuisines (sesame chicken is my fave!), progresso soup, sandwiches or leftovers.
