We've started trying to meal plan each week, and it's worked really well to keep us from overspending and still having a lot of food at home. However, I'm tired of my standard recipes.
What's on your menu this week?
Re: Meal plan for the week?
my usuals:
tilapia (I buy it fresh at HEB. they have it already spiced/breaded and all i have to do it pop it in the oven and bake it). Served with rice and steamed veggies.
sauteed salmon (seasoned with chili powder, cinnamon, little bit of salt). severed with rice and veggies
spaghetti with meatballs (for DH) with side salad (for me)
tuna casserole (if you want a recipe, let me know. it's not healthy but it's so easy and cheap!)
taco night (refried beans with mine, meat for DH)
now... time to share your 'standard' recipes so I can mix up my usuals.
"The House We Built."
A journey of building the dream.
Next week's menu:
* beef tacos -- trying this recipe: http://ellysaysopa.com/2010/08/02/chipotle-beef-tacos-with-caramelized-onions/
* breakfast for dinner -- fried egg sandwiches for hubby & bagel thin with scrambled egg for me and fruit
* Green Chile Chicken Enchiladas & Black Beans
* Grilled chicken, corn on the cob & salad
... and i can't remember what else.
Sorry! I was at the airport and on my phone.
We do a lot of nachos and quesadillas when we don't want to really cook.
We use leftover KA chicken tacos for the above.
Some of my recent favorites recipes are:
No sauce pasta (saute halved small tomatoes and sliced zuchinni, then toss with pasta, ricotta and Parmesan) it's rich and delicious warm but also nice leftover as a cold pasta salad in the summer.
Tomato Pie- except I used a pint of small tomatoes sliced in half, added a half a white onion that I sauteed and reduced or eliminated the mayo. I've made it with 1/4 c mayo which was good and still rich but also with no mayo and two eggs instead.
Shrimp and Andouille with Grits OMG this is so good! I sometimes skip the shrimp (because I'm lazy) and have also subbed or added sliced peppers rather than tomatoes and its been delish! It looks pretty and fancy, but isn't hard at all.
Haven't made this week's menu up yet but some recent ones:
We've had veggie stir fry a lot lately (eggplant, yellow and zucchini squash, bell pepper, snow peas, broccoli, garlic and 1/2 cup teriyaki)
Turkey tacos
Parmesan breaded baked chicken with rice and veggies
fried chicken w/gravy & mashed potatoes
hamburger steak (basically hamburgers cooked in a frying pan) w/gravy & mashed potatoes
thin sliced steak (can't remember the cut) cooked with enchilada sauce and potato slices, served with Mexican rice (DH makes this usually, sooo yummy!)
My Bio (wedding pics added 7/6)
My 101
We did Greek Salad tonight
Barbequed Salmon with rice and some green veggie
Blackened Ahi Tuna with salad and rice
That's all I've got. I only make dinner when DH is in town and he's gone again on Wednesday. The other nights I just make salads or lean cuisines.
Don't have a plan ready yet but here are some fav's:
Will share recipes for those who want!
I'm liking pasta salads right now, here's a link to some great recipes: Pasta Salads.
MrsRosie's salad is delicious, as is the wagon wheel taco pasta someone mentioned--I haven't tried the others yet!
