home made salsa

I decided this morning that I'm going to make a batch of homemade salsa and can it for future use (I bought a canner a few weeks ago with a "hooray we made our sales goal" gift certificate from the cooking store I work at part time).  This will be my first attempt at canning and I'm actually really scared about it!  I know that if I follow the recipe to a T that it will be fine but I'm a little nervous that I'll do something wrong and give everyone I love botulism!  Indifferent  The recipe is right from a canning cookbook put out by the ball canning jar folks so I have to believe that they know their stuff.  Eeks!  I hope it tastes good!

    Canning is something I've always wanted to try but am just too lazy... I hope everything goes as planned :)

  • Let me know how it goes. As soon as I have a kitchen that can fit both me and canning equipment at the same time, I'll be doing the canning thing too!

  • *phew*  all done!  It only ended up making 3 and a half pint jars of salsa which was less than expected but thats ok.  And when people tell you to use gloves to cut Jalapeno pepeprs, take them seriously.  Ouch!!  :)  Lesson learned.
