Dessert Dilemma

Tonight we're doing birthday dinner for my sister-in-law.  I'm having a hard time thinking of a dessert.  She can't have milk products right now and with the temperatures we're going to be having today and no a/c there is no way I'm baking a cake when I get home.  The first thought that popped into my head was cool whip and fruit but my creativity is stopping there.  Any ideas for something that doesn't contain milk and doesn't need an oven?

  • Italian ice, sorbet...with some crispy bakery cookies.  You could also slice fresh fruit over the sorbet.

    I have also done parfaits using layers of sorbet and sliced fruit.  They look really pretty.

    My baby girl is a married woman...and now my baby girl HAS a baby girl. Time unfolds in such an amazing way. I've been blessed!
  • One of my fav desserts is sliced strawberries with a drizzle of high quality (like $30 a bottle plus) balsamic vinegar over it.  If you don't have good vinegar handy, you can mix up some regular grocery store stuff with a little honey and reduce it on the stovetop until it is a syrup consistency. 

     Granitas are good too - nice and summery.

    I love the sound of the strawberries but I'm not sure SIL will go for it.  I'm definitely saving this one!

    EDIT: Oh, right no baking. Chocolate covered strawberries are always a win.

    Shoot, it's not.  It used to be but now it's not.  That stinks... someone at work suggested a yummy jello+cool whip+fruit pie... I guess I'll have to wait to make that one.

    I think I might go with the sorbet and fruit idea... I'm getting lazier and the options are getting fewer.  Stick out tongue
