Let's share some tasty recipes. I need new ideas and I have a good one I made last night. Not horribly bad for you...though not great either. but SUPER tasty.
Turkey Pot Pie with Cheesy Biscuit Topping (I calculated it to 8 WW points if any of you are doing that. But thats for 8 servings, not the 6 that they claim. Actually, you could probably get 10 servings out of it too!)
Its great for leftover turkey (we had roasted a turkey this past weekend) and you can use any veggies you like in it. AWESOMEEE

Healthier options: Use margarine instead of butter, use low fat buttermilk, use low-fat shredded cheese

DH's favorit meal is chicken stiry-fry which is pretty self explanatory. Another favorite is pork with ginger-cherry sauce (this was served at our wedding too!)
Sauce:
1/2 c cherry preserves
2 tsp soy sauce
1 tsp ground ginger
1 tsp rice vinegar (or regular vinegar)
Mix together and heat in the saucepan.
Grill the pork and pour sauce on top. We usually have it with brown rice or rice pilaf and whatever veggie you feel like having!

I'm making dessert for a bbq right now.
Buy watermelon. Zig-zag cut off top, and or other design of your choosing. Scoop out watermelon using melon baller. Freeze scooped out bits. Just before serving, return frozen watermelon to hollowed out watermelon rind.
Eat frozen watermelon. Delicious.
I also like grilled watermelon, with honey & cayenne pepper.
I like watermelon.

I'll do 2 appetizers I'm always asked to bring to parties ...
?Sister-in-Law? Salsa (my SIL passed this down to me, and she got it from her SIL hence the name)
3 cans stewed tomatoes (I drain some juices out of this)
? large onion
3 cloves garlic
Couple handfuls of cilantro (to your liking)
1 jalapeno (seeded or not your choice)
Salt & pepper to taste
I normally roughly chop the onion, garlic and jalapeno and then throw all of the above into a food processor and ?blend? until desired constancy. Once in serving bowl add a couple dabs of Worcestershire sauce and refrigerate until cold.
Ranch Cheese Ball
2 packages of cream cheese
1 bag of finely shredded sharp cheddar
1 packet of dry ranch dressing
Salt & pepper to taste
Mix all together (mixing with your hand works the best) & form into ball. Roll in chopped pecans if you wish. Serve w/ crackers of your choice!
I made this last night....
Perogie casserole:
1 bag of perogies
1 jar of spaghetti sauce (mix together)
add any veggies you like, grate cheese over and bake at 350F for 30 minutes.
It's pretty yummy....but a lot of calories!
Ooooh I've got lots. One of my favorite recipes of all time is my homemade pizza.
Simple Pizza Dough
1 1/2 cups flour (can replace up to half of this with whole wheat flour)
1 teaspoon salt
3/4 teaspoon active dry yeast
1/2 cup lukewarm water (may need up to 1 or 2 tablespoons more)
1 tablespoon olive oil
Stir dry ingredients, including yeast, in a large bowl. Add water and olive oil, stirring mixture into as close to a ball as you can. Dump all clumps and floury bits onto a lightly floured surface and knead everything into a homogeneous ball.(If this is difficult try this- Leave the dough in a lightly-floured spot, put the empty bowl upside-down on top of it and come back in 2 to 5 minutes, at which point you will find the dough a lot more lovable).
Knead it for just a minute or two. Lightly oil the bowl (a spritz of cooking spray perfectly does the trick) where you had mixed it ? one-bowl recipe! ? dump the dough in, turn it over so all sides are coated, cover it in plastic wrap and leave it undisturbed for an hour or two, until it has doubled in size.
Dump it back on the floured counter and gently press the air out of the dough with the palm of your hands. Roll into a ball and let it sit under that plastic wrap for 20 more minutes.
Pizza Sauce (I always have left-overs and use it as pasta sauce)
4 Roma Tomatoes
1 to 2 tablespoons olive oil
2 cloves of garlic, minced
Pinch of red pepper flakes
Splash of white wine
1/2 teaspoon sugar
3/4 teaspoon salt
Bring medium pot of water to a boil. Poach the tomatoes for one minute only, and then drain them. As soon as they are cooled off enough that you can touch them, peel them. The peels should come right off. If they don?t, make a slit in the skins. This always does the trick. (Make sure you peel the tomatoes before you go on!)
Drain and dry the pot. Put it back on the burner over medium heat. Pour in olive oil and let it heat completely before adding the garlic and stirring it for a minute with a wooden spoon. Add the red pepper flakes and stir it for anther minute. You do not want the garlic to brown. Put the peeled tomatoes in the pot, along with the wine, sugar and salt. Break the tomatoes up with your spoon.
Let the sauce simmer for about 30 minutes, stirring occasionally, until the tomatoes break down. Carefully taste without burning your tongue and adjust seasonings...
Warning: the sauce is very thin and runny, but is delicious on the pizza. I occasionally add a few spoonfuls of whatever canned/jarred pasta sauce I have in the fridge at the time to thicken it up.
Assembly
Once your sauce is made and the dough is ready coat your pizza pan with a dusting of cornmeal and roll the pizza dough out to fit the pan. Then top with sauce (keep the layer of sauce light, too heavy and the dough won?t cook properly). Add thinly cut slices of fresh mozzarella cheese, spoonfuls of ricotta cheese (optional) and sliced basil. Bake at your oven?s highest temperature on the bottom rack until bubbling and irresistable.
I recently became obsessed with this mediterranean pesto pizza I threw together a little while ago. Sorry there are no specific measurements.
I used the Boboli pizza crust and it turned out really well. We tried to make it with a pizza crust mix and it burned like crazy.
1. Mix approximately 2 parts pesto with 1 part olive oil, enough to easily spread and cover the pizza crust. Add two or three cloves minced garlic, depending on your taste and the size of pizza and some red pepper flakes and mix well. Spread on the crust.
2. Add shredded mozzarella cheese
3. I top with roughly chopped spinach, mushrooms, thinly sliced onions, sun-dried tomatoes, crumbled feta and pine nuts. I'm sure red peppers, kalamata olives, or capers would be good, if you liked that sort of thing. Fresh basil would also be tasty. Cherry tomatoes also work, if you don't have sun-dried tomatoes.
4. I cook the pizza longer than the package directions, but just until the cheese is melted and the veggies are cooked. Too long and it'll burn the crust, and this is gross. We had the medium-ish pizza crust and it cooked about 25 minutes.
