Make ahead recipes?

I was recently given some good advice to try making some meals/dishes during the weekends so I have more evening time during the week.  Do you have any recipes that are good for this?  I've never been one to freeze things so I really don't have any experience at what's good/bad. Or, if you know of a good blog/website/etc that's a good source, that would be great, too.

  • Google Freezer Cooking for a plethora of sites and recipes.  Lasagna definitely freezes well. I want to try freezer cooking but haven't found the time yet.
    We have so much time, and so little to do! Strike that, reverse it.

  • the idea of freezer foods sounds fantastic... but then when I'm sitting on my @rse on the weekends, I can never find the motivation to cook ahead.

    Hmmm. Maybe I need to look into this for some inspiration.

  • I've never been much on freezing either. I've been trying to branch out more but I still don't freeze all that much but here are our go to freezer meals:
     
    Freezer Pizza (you can just make crusts, or assemble) -- likewise, i make my own english muffin/bagel pizzas sometimes too. pop them in the oven & assemble salad. dinner with ~5 minutes of effort. Cheesy Stuffed Shells - we love these and they freeze great. i use just a few at a time so we get a bunch of meals out of it. same as above, i whip up a salad or make some broccoli/other green veggie and dinner is done in no time.
    a few other weekend prep recipes:
    Pulled Pork Tacos - make a batch on Sunday. We will have tacos for dinner monday, quesadillas or something tuesday for dinner so at least two meals out of it (depending on just how much hubby eats. lol.) Italian Beef Sandwiches - same as tacos. i'll make a batch sunday. put the meat in the fridge. nuke monday for sandwiches. tuesday/wednesday use leftover beef to make Shredded Beef & Gnocchi (only takes maybe 10-15 minutes to make?) 
     
    Beefier Bean & Cheese Burritos - we've frozen these many times. hubby loves when i make a big batch and he can grab them for lunches but they work for dinner too. when we nuke them after freezing, i usually put the microwave on 50% power otherwise the edges of the tortillas are kinda not too good.
    i'll keep brainstorming... i know i've got others. 
  • this is one of my favs and it freezes well.  I buy frozen brown rice (at HEB, near the "fancier" vegetables) to make it easier.  you can easily sub or omit any of the ingredients.  I've added shrimp, subbed for green enchilada sauce, added corn, you get the idea.

  • You guys are great.  If I get to it this weekend, I'll let you all know how it works out.
