I was recently given some good advice to try making some meals/dishes during the weekends so I have more evening time during the week. Do you have any recipes that are good for this? I've never been one to freeze things so I really don't have any experience at what's good/bad. Or, if you know of a good blog/website/etc that's a good source, that would be great, too.

the idea of freezer foods sounds fantastic... but then when I'm sitting on my @rse on the weekends, I can never find the motivation to cook ahead.
Hmmm. Maybe I need to look into this for some inspiration.

a few other weekend prep recipes:
Pulled Pork Tacos - make a batch on Sunday. We will have tacos for dinner monday, quesadillas or something tuesday for dinner so at least two meals out of it (depending on just how much hubby eats. lol.) Italian Beef Sandwiches - same as tacos. i'll make a batch sunday. put the meat in the fridge. nuke monday for sandwiches. tuesday/wednesday use leftover beef to make Shredded Beef & Gnocchi (only takes maybe 10-15 minutes to make?)
i'll keep brainstorming... i know i've got others.
this is one of my favs and it freezes well. I buy frozen brown rice (at HEB, near the "fancier" vegetables) to make it easier. you can easily sub or omit any of the ingredients. I've added shrimp, subbed for green enchilada sauce, added corn, you get the idea.
