pasta salad recipe, anyone?
mornin'!
it may be hard to believe, but i've never made a cold pasta salad. our big rivalry football game kicks off on saturday (UL v. UK - go CARDS!!!) and we have a huge tailgate. I'm making a ton of stuff, but DH requested pasta salad.
Anyone have a good, simple recipe for cold pasta salad? Anyone?

Pasta (tri color rotini is my fav).
cherry tomatoes
broccoli
carrots
chedder cheese (in little chunks)
I do a little salt, pepper and use a low fat italian dressing. I usually make it, then use 1/2 the bottle, stir, and let sit over night. Then bring the bottle with you, add a little more right when ready to serve and then have it there is people want to use more.
A friend also does a greek one.. she does pasta, olives, feta and uses balsamic dressing.
I found this recipe on All Recipes and I've made it a couple of times for family gatherings. It's pretty good.

I normally do something similar to this. adding onions, chickpeas, & peppers (in addition to what's listed above). but rather than using all italian dressing I usually use a small container of fat free greek yogurt, with a little bit of mayo, a tbsn of vinegar, a little bit of olive oil & maybe a tbsn or so of italian dressing.

Bow tie pasta (1 lb)
Olive oil (I use light not virgin)
2 cloves of crushed garlic
2 vine ripened tomatoes (diced)
1 ball of fresh mozzarella (small cubes)
salt & pepper to taste
This recipe can be served hot, warm or cold... as a main dish or a side dish. We have it weekly at home.
Add diced tomatoes and cubed mozz in a large bowl - mix in crushed garlic and add a little olive oil to blend. Add in the drained pasta and some more olive oil, then add salt & pepper as desired

What you need:
1lb boxed macaroni (any kind, I use spirals usually)
1 bottle of zesty italian dressing
1 package pepperoni pre sliced
1 green pepper diced
1 onion diced
1 can sliced black olives
You fave cheese...I use chedder since DH likes it and I just pick it out...chunked
Combine everything but pasta and cheese in a bowl and refrigerate over night to marinate. Add cooked pasta, cheese, and mixture just before serving.
Always a crowd pleaser!!
Macaroni Salad
1 lb Cooked Macaroni
1 Chopped Bell Pepper
1 Small Chopped onion (red or yellow is fine)
2 Grated Carrots
2 Cups Mayo or Miracle Whip
1 Cup Vinegar
1 Cup Eagle brand (Sweeten Condensed Milk)
1 Cup Sugar
1 Tsp Salt
? Tsp Black Pepper
Pckg of cubed cheese or chunk Cheese Cubed
Mix Mayo, vinegar, Eagle Brand, Sugar, Salt, and pepper. Add Veggies, cheese, pasta. Chill and serve.
I make this Orzo Pasta Salad
Cook one box of Orzo pasta. Drain. Spread the orzo out on a cookie sheet to cool and drizzle with olive oil so it doesn't stick together.
When cool, transfer to a large bowl. Add dried cranberries, feta cheese and fresh basil, lemon juice and olive oil.
Easy and delicious!
