Campground Camping - need meal ideas

Hubby and I are about 2 weeks away from a camping trip to the North Shore.  We stay in a campground so we'll have access to our cooler and camp stove.  I'm feeling so uninspired for meal ideas.  Lunches will be on the trail so sandwiches and granola bars but I'm totally in need of fun new breakfast and dinner ideas.  The only things I am thinking up is scrambled eggs, pancakes from a mix, and spaghetti.  :)  I can do better than that.  Anyone willing to share their go-to recipes?

  • DH loves breakfast burritos.  We scramble some eggs then add green pepper, onion, and sausage and cook it all together and throw it in a tortilla with some Taco Bell sauce (swipe some packets next time you eat there). We usually cook up a box of boxed hashbrowns (in the boxed potato area) too.  We also like french toast.

    Hobo dinner is always good- we do keilbasa, potatoes, carrots, onion, and seasonings all wrapped up in tin foil and either throw it on the fire or on the grill. 

    Pork chops, caesar salad (shake it up and serve from the bag it comes in), and rice-a-roni. 

    Bagels and cream cheese make a good lunch too.  

    If you have a pie iron we always do a pizza and pie night too.  Pizzas can be made with squeeze bottle spaghetti sauce, cheese and your choice of toppings.  Then you use the pie iron again to make your pie for dessert.  

    We're camping this weekend and doing all of the meals above :-)

  • We always do diced potatoes with butter, salt, pepper, garlic, and onion.  Very simple but the last time we went camping we did these for dinner with steaks and the next day we scrambled eggs and cheese into the leftover potatoes.  A side of breakfast sausage and we had a complete meal.

  • We don't usually do a hot breakfast when camping ... it just means more dishes to wash and we'd rather get started on our adventures for the day than wash dishes :-) For breakfast, we usually just have fruit & bagels. Last weekend, I made some banana nut muffins that I brought along for breakfast. Once in awhile we have oatmeal, if you bring the instant packets all you have to do is boil water & mix it in your bowl  - at least there are no pots/pans to wash that way.

    Last weekend when we were camping, we made fajitas one night. We cooked chicken, peppers & onions in foil packets with seasonings, then put on tortillas. We also added shredded cheese, diced tomatoes & sour cream, but you wouldn't have to.

  • We do omletes in a bag.  Just put the eggs in a ziploc and mush them up, add ham, onions, peppers, or whatever you like and drop the ziploc in boiling water. 

    I FIRMLY believe in grill baskets. One of our favorites in thick cut pork chops with an onion slice, tomato slice and wrapped in bacon in the grill basket.  They are AMAZING. 

    With a grill basket you can do chicken, burgers, steaks....almost anything....

    If you have a waffle maker, Aunt Jemima makes a pancake mix where all you add is water and that is sooo easy to take camping. 

    I always bring my chicken taco dip.  ITs great for when you need a quick few bites until food is ready and it stores sooo well! If you wold like the recipe, just yell

    And another staple for us is lots of dogs, brats, etc and our campfire sticks.

  • Thanks all for the ideas!  I have been having nest issues so I couldn't get back onto the message boards without my computer crashing to say I'll have to see if any of these sound good to the hubster.  I totally have a grill basket - wouldn't have thought to throw it in but that is a fab idea too!  Gosh, I'm hungry now.  :)
