Oh my goodness. It's been an ugly few days. Yuck, yuck yuck. Rain and cold. Bleh! I hope the sun shines today.
Dallas has asked me to lighten up a bit on some of our meals (he's started swimming 4 times/week and is trying hard to drop some weight) so I tried my best. Here's what we're eating this week:
Monday: Hashbrowns a la Cheese Steak (darn, can't find this recipe on my work 'puter. If you'd like ity, let me know and I'll grab it from home);
Tuesday: Tuna melts w/ salad and veggies and dip;
Wednesday: Slow Cooker Beef Stroganoff (Amies recipe and it's *awesome*);
Thursday: Leftovers;
Friday: Crunchy Coconut and Lime Burgers w/ pasta salad.
Slow Cooker Beef Stroganoff
(Serves 4)
Mix meat, onions, and mushrooms in slow cooker.
Add broth; stir. Cover. Cook on LOW for 6-8 hours, or HIGH 3-4.
Combine cream cheese and flour. Add to meat mixture just before serving; stir until cream cheese is completely melted and mixture is well lended. Add to hot pasta, toss to coat.
This week's grocery bill = $87

Thanks Mel for posting your weekly menu! This week is my first starting menu planning. I shopped for all of our groceries yesterday and got only items we would need for the menu. I don't remember what were having past today but I will post my menu when I get home.
I'm hoping to get on the meal-planning bandwagon next week. Seriously this time. We need to get both our budget and our calories under control.
Mel, do you think I could use leftover roast beef in that stroganoff recipe?
I can't see why not, but I would likely not put it in the crock...it'll dry out. You could probably throw everything in a pan to heat it up then mix in the cream cheese.
That's probably smart. I thought about that after I posted the question. Now I have a dinner plan for tomorrow night!
