  • 1. What is your favorite cleaning product? My dish scraper. It's basically just a square piece of plastic (from Target, BBB, etc.). Makes cleaning dishes with baked on food SO much easier.

    3. Which of DH's (or SO's) relatives is your favorite, and why? Most of his relatives are pretty fantastic, but his dad is one of my favorites. He's genuinely kind and caring, he's inventive and creative, and he's honest.

    4. What is the last dinner you cooked? Post a quick recipe for it if you have it. Open faced chicken sandwiches, so good and so easy.

Ingredients: 2 chicken breasts, cooked and shredded (or a can or two of chicken breast meat).   3 green oinions, chopped.   1/2-1 cup shredded swiss or mozzarella cheese.   1/4 of a bell pepper, chopped (optional).   1 small can sliced black olives, drained (optional).   1 Tbsp lemon juice.   Franks hot sauce or tobasco sauce, a few drops at minimum, more if you like spicy food.   Mayo or miracle whip, just enough to coat mixture.   Salt and pepper to taste.

Directions: Mix all ingredients together. Spread at least 1/2 inch thick on bread (best on French or Italian bread, but can use sandwich bread or leftover hamburger or hotdog buns). Bake at 350 degrees for 15-20 minutes, or until cheese is melted. Can stick it under the broiler for a few minutes at the end if you want the tops brown.

    5. Why are you thankful (or not) that it's almost Friday? Hoping to get lots of household chores done this weekend. Just to prospect of a completely clean house and some transplanted outdoor plants makes me feel more relaxed. My 'to do' list has gotten way too long.

    4. What is the last dinner you cooked? Post a quick recipe for it if you have it. I made Chicken and Stuffing Casserole last night, and it was DElicious!!

    Chicken and Stuffing Casserole

    Ingredients:
1 lb. boneless/skinless chicken breasts, pounded to even thickness and cut into 1" cubes, or 1 lb. shredded cooked chicken
    2 Tablespoons butter
    2 cloves garlic, chopped
    1 small onion, diced
    1 stalk celery, diced
    2 Tablespoons flour
    1 1/2 cup chicken broth
    1/2 cup warm milk
    8 oz. Sour Cream
1-2 cups thawed frozen vegetables of choice (I used green beans and broccoli)
1/2 cup shredded cheese (I used cheddar)
2 cups stale bread cubes (stuffing mix-I used a box of stove top)
2 teaspoons desired herbs (such as parsley, sage and thyme) - I omitted this since the stove top had seasoning already.

    Directions
Preheat oven to 350 degrees F and prepare a casserole dish with cooking spray.

In a medium saucepan, melt butter over medium heat.  Add in garlic, onions and celery and cook about 3-5 minutes.  Stir in flour and cook until slightly golden brown.  Slowly whisk in milk and 1 cup broth.  Simmer until it reaches a light boil and begins to thicken a bit.  Stir in sour cream, chicken, vegetables and cheese.  Add mixture to prepared casserole dish.

In a separate bowl, combine bread cubes, remaining broth (should be a 1/2 cup, but I used about 3/4 ) and seasonings as desired.  Place on top of casserole mixture.

Bake uncovered for 30-45 minutes until chicken is cooked through (if using raw chicken), or until heated through and bubbling if using cooked chicken.

    5. Why are you thankful (or not) that it's almost Friday? It's been a long week, so I am looking forward to relaxing this weekend.  I have a bachelorette party on Sat night, which I am excited for, but I am also nervous/sad about being away from Carly.  I don't think I'm going to make it the whole night...

    5. Why are you thankful (or not) that it's almost Friday?

I'm never particularly care about Fridays... as a PhD student, I generally work 7 days a week anyway, so the weekends don't mean much to me. ...  But usually I blow off my work and just relax Friday nights, so I guess I'm looking forward to that.
