hey all, how are you? i've been lurking around every once in a while. and it's been good to see ppl on fb.
just wanted to write a random confession about what i'm eating right now. i have a refrigerator chock full of fruits and veggies right now - mexican papaya, strawberries, oranges, apples, korean melon, kale, spinach, celery, persian cucumbers, carrots, corn, sweet potatoes, parsley, mint, probably more i can't think of off the top of my head.
part of the reason i have so many veggies is because i just got a juicer and am planning to drink some of my daily veggie requirements, because i never eat enough. i'm excited to try it for the first time. yet not excited enough to have tried it yet in the 3 days since i've gotten it. peeling that huge papaya seems daunting.
anyways, i also have veggies because one of my fave healthy lunches is trader joe's Mediterranean Hummus in whole wheat pitas choc-full of my fave chopped veggies - tomatoes and cucumbers go especially well with the hummus, but anything else too. And TJ's also sells this $1.99 Red Pepper Spread with Eggplant & Garlic that goes so yummy with the above sandwich.
but what am i eating instead? microwavable mac and cheese from Velveeta. So yummy and easier than all that prep! i'm bad.
Btw though, Velveeta is so much tastier than Kraft! (I know, the fact that I will even eat Kraft/Velveeta says something about my food sensibilities, but i don't care.)

The sad thing is, my mental response to this post was, "Oooooh, Velveeta mac and cheese! I wish they had that in Australia. :::sad face:::"

I had mac and cheese last night for dinner. After the wedding, my good eating habits went right out the window. Yikes!!
