Anyone ever canned fruit?

I'm going in the way back machine and would like to "put up" some fruit (mainly applesauce).  Anyone ever done it?  Any advice so I don't poison my family?

  • I have more experience with pickles and relish, but I've done fruits on occasion. 

    The Ball Blue Book is my bible for canning.  In a nutshell, the applesauce needs to be hot (like boiling) when you fill the jars, then you need to process them for 20 minutes.  If you have all the proper canning equipment it makes the process much easier.

    If you have room in your freezer, applesauce freezes well.  I've canned stuff many many times but I'm still most comfortable doing it when my mother is by my side to guide me.

  • This is the book I have.  I've seen the one Fallin referenced but haven't used it.  The Blue book has very basic instructions with pictures for the first-time canner.

  • Canning intimidates and frightens me. I've had success freezing homemade applesauce in ice cube trays and thawing as needed. Let us know how it goes if you give it a go!

  • I've also had success with frozen pear sauce for MC, but we're pickier and this applesauce will be as much for us as it is for her.  I made a big batch of chunky, awesome applesauce last fall that was to die for, and then in December when we made latkes, we were really wishing we had some saved.

    I ordered up some canning tools on amazon, we'll see how it goes later this week/next weekend.

    foodinjars.com seems to be a good resource as well.

    If this works out, I'm totally going to do jam next summer.  I'm a bit obsessed with homemade strawberry jam.

  • I made tomato jam today.  It only makes enough for one pint so I didn't have to process any jars but it's so good.

    Canning and preserving is a great skill to have.  My mother and I made jams and relishes with fruits and vegetables from her gardens as favors for my wedding.  They were a big hit.
