I got some turkey sausage (I can't eat pork), since I don't eat sausage I thought I would make some jambalaya. This way in case I don't like the sausage I can eat everything else. I know I'll need to cook the sausage first since it's not smoked.
Please give me your best recipe.
Secondly I need to know how to cook a venison shoulder. Someone gave one to us. The only recipes I can find say to wrap it in bacon (see above). I was thinking of getting duck fat and rubbing it all over and then cooking. What do ya'll think?

I have no suggestions for the jambalaya (I've never actually cooked it myself oddly enough) but I highly recommend doing a red wine marinade overnight for the venison. I don't have an exact recipe that I follow since I tend to make things up as I go but what Pioneer Woman does is fairly close to my method. Her marinade is spot on although I don't use whole peppercorns. I also don't use tomatoes in the braise but it sounds good in theory. Of course this is extra delish if you buy two bottles of wine - one for the marinade and one to drink with dinner.
We like Mr. Shoe's recipe. You can substitute whatever meats you want!
