Whats for dinner? help me out!!

I'm running out of recipes to make for dinner! haha I've found some new ones online but my issue is DH isn't a huge meat eating fan. Not that he doesn't like to eat meat..but I'm having a hard time coming up with recipes that don't have beef pork or chicken it in and that isn't pasta haha. Does anyone have any good recipes that they want to share?? 

also DH doesn't like seafood haha so thats a no go too. Anyone have any ideas? :)

  • What about an eggplant or zucchini lasagna?  Use the veggies in place of the noodles.

  • Well I made homemade meatloaf :) but what about spaghetti with just sauce & noodles?

  • I could use some dinner recipes too. My husband loves meat though, lol.  But, I could use non meat ones too as my hubby is trying to lose weight.  My husband won't touch green vegetables but I can get him to eat salad now sometimes.
  • Whatever you make, put it over rice instead of noodles.  I do that, because I could live off of noodles, but my waistline would expand rapidly.

    We had shrimp penne in a creamy tomato sauce tonight, so I guess our recipe isn't much help. 

    I don't know how adventurous your hubby is, but I looooove tofu instead of meat.  And eggplant/squash/zucchini.  But I also love seafood.

  • I LOOOOVE seafood too haha DH won't even touch it. Its always so funny to watch him take me out to Red Lobster when I pick there for my birthday or something and he'll ask the waitress "what do you have that isn't seafood"  

    he gets points for taking me to red lobster despite his hatred for sea food :) 

  • He does get points for that!  DH had never eaten any seafood before he met me.  Now he loves shrimp and lobster, he'll eat clams, but he won't touch fish.  I always win when I make shrimp for dinner!

  • What about making just a veggie stir fry? I make stirfry all the time - easy to make and DH loves it (I always make it with chicken but you can easily leave that out)

    And he doesn't like any meat? Like no chicken, no steak? What about ham? Turkey?

  • do you have a slow cooker/Crock Pot?  It's a great time of year to bust that baby out!  I'm thinking about using ours tonight for something... I know DH will want to put our new grill to good use :)

  • Also an idea that you can make as veggie- quesadillas or fajitas. We make both of those all the time. 

    We have a quesadilla maker, but you don't necessarily need one to make them.  My parents make quesadillas all the time without a quesadilla maker.  You just put the totrilla in a frying pan, sprinkle cheese in the middle of the tortilla and then fold it half over the cheese, flip when melted.  You can fill them with all kinds of delicious sauteed veggies- onions, squash, tomatoes, peppers... avocadoes or homemade guac and salsa on the side.   You could even make some as veggie for DH and some with chicken/beef/shrimp for yourself!

    The same goes for the fajitas.  You could make them veggie, and fill them with sour cream, salsa, guacamole, cheese and grill some veggies to put inside for DH... and you could make somekind of meat to add to yours. 

    What's nice also is that quesadillas/fajitas make for GREAT leftovers in your lunch :)

  • You ladies are awesome!! Thank you so much :D  I am definitely going to be trying these out next time we go grocery shopping! They all sound soo good! haha I want to start making them now!!

    And to answer your question Lauren, DH does eat meat but hes just not that big a fan of it for some reason. He'd rather have something like pasta...and cheese. he is OBSESSED with cheese haha.Most of the recipes I had use chicken..but then it got a little old having chicken almost every other night haha.

     

  • I hear ya on the chicken. I have a really good recipe for BBQ steak tips made in a skillet. Let me know if you think he'd like something like that!

    Other ideas: You could make calzones. Or homemade pizza.

  • I made stuffed peppers last night, I used ground beef, peppers, onions, rice, and mushrooms.  But you could stuff it with all veggies, or various meats.

     I made it italian style,but next time I want to make a mexican style stuffed peppers!
