For some reason my husband took 3 pounds of chicken breasts out to thaw. I need to cook them but I really don't have an appetite for chicken right now. I'd like to just throw them in the crockpot but I really have no creativity for what to do with them. Any ideas?

You can just cook them and re-freeze!
I haven't really been able to get chicken breasts to come out well in the crockpot, but I made baked chicken last night that was really easy and really good.
Just spray a dish with nonstick spray, season the chicken with salt and pepper and put in the dish. Sprinkle the chicken with some olive oil, lemon juice, parsley, and oregano (recipe actually called for rosemary, but I didn't have any so I used oregano). Pour enough chicken broth in bottom to cover the bottom of the dish and bake at 400 for 30 min.
Salsa chicken? I would put a few of them in the crockpot with a jar of salsa and let that cook. It is good burrito filling if nothing else.
I always put a can or two of cream of chicken soup over a few and just let that cook too, it's yummy ontop of pasta.
Those are both REALLY easy and I am sure you can come up with a couple of variations.
