Foodies: Need cupcake help
DH and I are having 3 friends over on Saturday night (i.e. 5 people total including DH and me) to hang out, play Rock Band 2, see the kittens, and extremely casually celebrate one friend's birthday. ?She really doesn't like a big to-do, and refuses all presents except edible ones. ?So I thought I'd make cupcakes.
My questions:
1.) Are filled cupcakes hard? ?I saw an awesome recipe for chocolate cupcakes with white chocolate filling and cream cheese frosting, but I wondered if I'm not talented enough for filling. ?Also, I'm always really ambitious with cooking and then SUPER sad when I've over committed.
2.) What easyish, but from scratch cupcakes would be impressive?

Well, they are not from scratch, but I have never had a better, bigger, more enthusiastic response than from Giada's strawberry mascarpone cupcakes. If you want to make them from scratch, just find a white cake recipe.

I made chocolate cupcakes with a peanut butter frosting filling and thought they were pretty easy to do. You'll need one of those cake decorating tips and pastry bag (a regular plastic storage bag works just as well) to stick into the cupcake and pipe the filling in through the top. I think the only problem that you might run into is over-filling or somehow breaking the cupcake if the tip is in too deep. I'd make a couple of extra cupcakes for practice.
