Yes, of course! I haven't blogged it yet, but it's super easy and really good!
Lay the fillet(s) on a baking sheet lined with parchment paper. Season with salt and pepper.
In a small bowl, whisk together brown sugar and cumin...I don't know exact measurements (I usually just eyeball it) but I would say 1 cup of br. sugar and 1 Tsp. of cumin. Slowly add orange juice and mix until a thick paste forms. Be careful not to add to much liquid (the acid really breaks it down) because you want it thick.
Generously cover the fillet(s) with the mixture so a thick coat is on top. Bake at 425 degrees for 6-10 min. per 1" of thickness of the fillet(s). When it comes out, it has a nice sugary crust on top and a sweet glaze underneath....it's sweet and smokey and so good!
