What's the best way to hard-boil eggs for easy peeling?

Hello ladies.  I'm looking for what you do to hard-boil eggs that makes them easy to peel.  Nothing that I've done works.  I'm going to try something I found online today, but thought I'd ask some "real people" instead of some online strangers.

  • I haven't had a ton of success, either, but I've heard that getting them good and cold before starting to peel is key. I'm usually too impatient, tear into them while they're still sort of warm, and end up ripping half the white off. Sad
  • For me is to put them in ice bath once they are done cooking. I think it really helps.

  • Older eggs peel easier.  If you buy fresh eggs they are near impossible to peel.  My dad used to raise chickens and when we wanted hard boiled eggs we would buy eggs from the store.  So now when I boil eggs I use the ones I have had longest.
  • I never seem to have an issue. I put my eggs in for about 13 min and then dump the hot water and refill the pot with cold water so I can handle the eggs after a minute or so. Nothing scientific, but it seems to work for me.

    THIS!  This is really the only thing that makes them easier.  Otherwise it's just luck of the draw.  But if you know you are going to need them, try to buy them at least a week before you plan on boiling them. (I prefer 2 weeks) If you want to get all scientific, it's because the volume of the white in the egg decreases over time allowing more air in the egg.

    And I think peeling them while warm helps to decrease the amount that gets destroyed with fresh eggs.  Cooling them all the way causes them to stick.  I just run cool water over mine to make it possible to handle them.

  • Okay totally chiming in late on this one but before you boil them let them soak in cold water first if you watch them you will see bubbles coming off of the eggs (This helps with cracking while boiling). Either wait till this stops or aprox. 10 minutes leave them in the same water and bring them to a boil. Once the water is in a rolling boil cook for 10 minutes. Take of stove and run cold water into the pan until that water cools wait a few minutes run the water until cool agian.  I don't like using older eggs I have found the opposite problem with peeling although I have never gotten farm fresh either haha. I then just crack the eggs by rolling them on the counter and setting them back into the water for a few minutes and I peel them in the water.

     

  • Thanks everyone!  I used a few of your tips for the peeling.  I let the eggs get to room temp before I boiled them, put salt in the water, and covered over medium heat for 30 minutes.  Then bathed them in an ice bath and tried to peel them about an hour later and had one great peel and two that stunk.  So I dried them all off and put them in the fridge.  Later in the evening, I decided to give it a try again while I watched a movie with HH.  They were super cold and they peeled wonderfully!  I am going to try peeling them under water for my next batch tonight to see how that works for me.
