Veg. soup?

Anyone have a really good recipe?  I bought a bag of frozen veggies that was on sale at kroger a few weeks ago (it was labeled veggie soup mix).  Any suggestions?

  • I always just threw a ton of frozen/can and fresh veggies ( carrots, peas, green beans, corn on the cob, mushrooms) in a pot w/ several cans of stewed tomatoes and a few cups of water. Let that come to a boil and simmer for about an hour. you may need to add more water. you can also use veg. stock or chicken broth for flavor.
  • I have a crock pot one that is pretty easy and versatile. However, my cookbooks are packed. I know it uses cumin and oregano, and has beans in it. The orginial recipe calls for 2 cans of beans--I usually use black and kidney beans. You puree one can of beans with the juice from both cans to thicken the soup up. I puree the kidney beans, and it almost comes out looking like veggie chili/stew. Canned tomatoes make up the rest of the liquid. I throw in frozen corn, zucchini, etc.

  • the pioneer woman posted a recipe for minestone soup on her blog. it looks yummy and i think i am going to make it sometime. but i dont see why you could not just use that and alter it to fit what you need.
