I am in such a cooking funk lately

I really wish DH would go along with breakfast for dinner or some other non-traditional dinnertime meals every once in a while.  He insists on a real dinner every night though and lately I'm really not feeling it.  No interest plus I'm tired after working all day and doing a long commute.

It's not like he insists I slave over the stove, but frankly he's not a great cook and I feel guilty if I don't help him with the meal since he works just as much as I do.

No real point to this post besides whining, I guess :)  Gotta get out of this funk though as eating out every night isn't really a good solution!

    DH works from home and I commute so we tend to have different schedules.  He's eating lunch at 2 or 3 in the afternoon and I'm ready for dinner by 6.  So we tend to not even eat dinner together, which gives me even less incentive to cook something decent.  Last night I made tacos and I've been doing a lot of boxed mac and cheese...at least it's the trader joe's brand!

    I've thought about it and should really look up some more recipes.  Problem is, I'd have to get up early enough to put everything into the pot, whereas right now I pretty much get up, get ready, and run out the door.  I am so not a morning person.

  • I've done the prep work the night before and stuck the inner part of the crockpot in the fridge, then just take it out and turn it on.

    Why has this never occurred to me???  Thanks, I'm really going to have to look up more crock pot recipes now!

  • Yeah that's what I was going to say, just get it together the night before.  The only things I've made in there are pulled pork, corned beef, and shredded chicken tacos, but I've seen tons of recipes for just about everything.
  • I was def in one also (and still working to pull myself out of it), so I got a couple new cookbooks on meals for 2 from half.com and the library. I have Table for Two and Cooking for Two now, and got a bunch of recipes from the Betty Crocker one also (can't remember the name off the top of my head). Anyway, these have helped me a lot because before I never wanted to stray from what I knew I could either perfectly portion for us or we'd absolutely want leftovers for awhile after. Now I feel like I have options for being more creative without huge grocery expenses and leftovers that I won't eat. The Cooking for Two one is especially good because it has tons of tips for shopping better which was a huge issue for me.

    Sorry, that was long and not really what you were talking about, but I wanted to share how I'm trying to escape my food rut.

    Thanks for sharing!  No apologies necessary at all, silly.  I don't know what it is, but nothing seems to get me excited food-wise lately.  DH is great about eating leftovers, so I'm lucky in that department.  I'm just too tired/lazy/disinterested to want to cook lately!

  • I was going to suggest the crock pot. I used it about once a week when I worked on site and had the commute!

    I would tell DH to cook, but then again, I don't mind eating a bowl of cereal for dinner! I am not the greatest cook, but I still do the cooking 2-3 nights a week, Dh gets the other 2-3 nights and we eat out the other night(s)!

  • I'm not much of a cook myself. We're just as likely to eat egg sandwiches or pancakes for dinner....or takeout. I don't know how you ladies do it. I am too tired after work most days to even think about putting a meal together.

  • I find if I don't pre-plan something I'll end up doing cereal or some random boxed meal.  Worse even is that our temp rental doesn't have a microwave and the kitchen is about the size of a postage stamp so there's no room for one.  That really limits my non- cooking cooking skills!
