Getting him to open up.
I recently started dating someone new. He is a bit older then I am and he is very conservative in bed. He's what I call a "missionary in the dark" kind of guy. I would really like to open him up a little. He says he is open to anything I suggest but just isn't adventuous on his own.
Anyone I have ever been with before has always taken control and told me how they wanted it etc...so I am unsure how to handle this.
What are some postions that are a little more risque then just missionary and girl on top but are still tame enough that I don't scare the poor guy off...

There are a ton of positions described on this site, and it's a very useful resource. There's bound to be a few positions on there that would work well for you both.
Try putting your legs over his shoulders while you're lying down. It's not overly-crazy, but it feels amazing, and he might enjoy the change in scenery.
What is even better is if you are flexible enough to let your legs go back more, like if he is able to lean over you with your legs over his shoulders. Actually it's amazing.
Changing leg position and angle of entry can be easily done without changing position and the results are stellar. I'm a major fan of him leaning into my legs until they're behind my ears, it's AMAZING! You can start by moving your leg position during missionary: Brush your foot along his side and move your leg up as far as you can, knee to his ear basically, or have him sit up and put one leg on his shoulder and one around his butt, or both on one shoulder, or... any combination of things. I know it's not really a new position to try, but it might help add interest.
I like the candle idea, the dark thing always puts me off so I'm glad pp addressed it!
